Ricotta Meatballs with Crispy Topping: The Juiciest, Most Tender Meatballs You'll Ever Make

A family favorite that transforms simple ingredients into a comforting, crowd-pleasing dinner with a crispy, golden topping that takes it over the top.

Not to be dramatic, but there might be drama. For years, classic baked chicken meatballs have been my favorite of all time. And I still love them! But there's a new meatball in town. RICOTTA meatballs, to be specific. They are a force in my life. They are just super tender, juicy, versatile, and so easy.

Imagine this: you step in the door from school, work, or life and get hit with the smell of warm garlic bread. You see someone pulling a skillet of crispy-topped meatballs in bubbling sauce out of the oven. A bowl of dressed greens gets set on the table. People start to gather, forks are flying, dipping and crunching, and shushed eating begins. It doesn't get any better than feeling loved in this way.

Why These Meatballs Are Different

The secret to these meatballs is ricotta cheese. Unlike traditional meatballs that can sometimes end up dense or dry, ricotta adds incredible moisture and tenderness that makes every bite melt in your mouth. The ricotta also helps bind the meatballs together without making them heavy, creating a luscious, almost creamy texture that pairs perfectly with the rich tomato sauce.

I've made these with both ground chicken and ground turkey; I prefer turkey, maybe because it has a bit more fat. Ground beef also works, as does Italian sausage. And maybe you want to mix and match because this recipe is begging to be doubled.

As far as serving goes, it is physically impossible for us to NOT have these with garlic bread. I adore this garlic bread so much. But good old buttered noodles would work, too! And for veggies, a simple green salad, bagged Caesar salad, or steam-in-the-bag green beans on the side are all great options.

What Makes This Recipe Special

I love these meatballs because, thanks to that ricotta, they're juicy, luscious, and flavorful. My husband loves these meatballs because protein. Our girls LOVE these meatballs for who knows what reason kids ever choose to like anything, but the obsession is real. Our 3-year-old prayed before our meal the other night, and she closed her little eyes and folded her hands and solemnly said, in her tiny voice, "God, thank you that Mom made these meatballs."

Ricotta Meatballs with Crispy Topping

Total Time: 40 minutes | Yield: 4–5 servings

Ingredients

For the Ricotta Meatballs:

  • 1 lb. ground turkey (93/7 works well; ground chicken, beef, or Italian sausage also work)

  • 1/2 cup full-fat ricotta cheese

  • 1/2 cup Parmesan cheese

  • 1/2 cup panko breadcrumbs

  • 1 teaspoon garlic powder

  • 1 teaspoon salt

  • 1/2 teaspoon Italian seasoning

For the Crispy Topping & Extras:

  • 1 jar tomato sauce (marinara or pasta sauce; 28–32 oz recommended)

  • 1/4 cup panko breadcrumbs

  • 1/4 cup Parmesan cheese

  • 2 teaspoons olive oil

  • Chopped fresh parsley (for garnish)

Instructions

Step 1: Prep
Preheat the oven to 400°F. In a large mixing bowl, combine all the meatball ingredients: ground turkey, ricotta, Parmesan, panko, garlic powder, salt, and Italian seasoning. Mix until just combined don't overmix, or the meatballs can become dense.

Step 2: Roll the Meatballs
Roll the mixture into 20-24 small meatballs (about 1.5 inches in diameter). Drizzle some olive oil in the bottom of a shallow Dutch oven or oven-safe skillet to prevent sticking. Arrange the meatballs in the pan in a single layer.

Step 3: Bake
Bake on a middle oven rack for 20-25 minutes, until the meatballs are golden brown and cooked through (internal temperature should reach 165°F). Gently loosen them from the bottom of the pan with a spatula; they should have some nice browning.

Step 4: Add the Sauce
Pour the tomato sauce directly into the pan with the meatballs. Gently stir to coat all the meatballs in the sauce.

Step 5: Prepare the Crispy Topping
In a small bowl, mix together the 1/4 cup panko, 1/4 cup Parmesan, 2 teaspoons olive oil, and a sprinkle of chopped parsley. Sprinkle this mixture evenly over the top of the meatballs and sauce.

Step 6: Final Bake
Return the pan to the oven and bake for 5-7 minutes to warm the sauce. Then, turn on the broiler for the final 2-3 minutes to get the crispy topping nice and golden brown. Keep a close eye on it so it doesn't burn.

You're done! Serve immediately with a side of garlic bread, buttered noodles, or a crisp green salad. The combination of tender, juicy meatballs, rich sauce, and a crunchy, savory topping is pure comfort food magic.

Pro Tips & FAQ

How can I make this dairy-free?
These meatballs rely on ricotta for both tenderness and binding. For a dairy-free option, try classic baked chicken meatballs instead, and omit the Parmesan.

How can I make this gluten-free?
Simply use gluten-free panko breadcrumbs!

What type of tomato sauce do you prefer?
I like both Rao's and DeLallo tomato sauces for their rich, authentic flavor.

Can I make these with ground beef?
Yes! Ground beef, ground pork, Italian sausage, or any combination works beautifully.

What do you serve these meatballs with?
Garlic bread is a must for dunking into that skillet. Buttered noodles, a simple green salad, or steamed vegetables are also perfect accompaniments.

How do I store leftovers?
Store in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave until warmed through.

Can I freeze these?
Yes! Freeze the baked meatballs (without sauce) on a baking sheet, then transfer to a freezer bag. When ready to eat, add to sauce and reheat.

The combination of ricotta, Parmesan, and panko creates a meatball that is tender, moist, and incredibly flavorful. Baking the meatballs first allows them to develop a beautiful golden crust, while the final broil ensures the crispy topping is perfectly crunchy. The simplicity of using a high-quality jarred sauce means this meal comes together quickly, but the results taste like something that simmered for hours.

Whether you're feeding a family on a busy weeknight or hosting a casual dinner party, these ricotta meatballs are guaranteed to impress. And as our 3-year-old so sweetly reminded us, sometimes the simplest meals are the ones that become the most treasured memories.
