About Me

I'm Rhonda I was born in Newark New Jersey. When I was 11 years old my mother moved us to Paterson New Jersey. I learned about great food in both places. My grandmother and aunts and uncles were great cooks. I learned how to make everything from fried chicken to pasta, to chitterlings! My favorites were my grandmother"s chocolate cake and her baked stuffed roasted chicken. Follow my blog and get some of these great recipes! Thank You!

​​Mama's Lasagna

My mother's lasagna was a staple a have to have at every holiday meal! From Thanksgiving to Christmas! It was the most scrumptious smell throughout our home. We miss her, this is her recipe:

Shirley's lasagna

  • 2 lbs of Lasagna
  • 1 lb of Italian sausage
  • 2 lbs of whole ricotta cheese
  • 2 lbs shredded Mozzarella cheese
  • 1/2 tsp. of dried basil
  • 1 lb Parmesan and Romano cheese
  • 2 lbs mozzarella not shredded cut into slices
  • 2 lbs of your favorite spaghetti sauce
  • 2 eggs (optional)
  • 1/4 tbs salt
  • 1/4 tbs. fresh ground black pepper
  • 1/2 tbsp vegetable oil

Boil lasagna noodles until translucent, set aside after rinsing in cold water. use a lasagna pan fitting three lasagna strips across. Oil your pan, then cook your red sauce add salt and pepper to taste. If sauce is bitter add 1/2 tsp of sugar. next add sausage to oiled pan fry until brown. Add to sauce mixture. Begin layering sauce and sausage mixture into the bottom of the baking dish. Add first layer of lasagna then ricotta cheese dolloped in rows of three to four dollops. Add shredded mozzarella on top, then Parmesan, repeat layers until the top layer Add sauce and sausage for top layer then cut whole mozzarella slices on top. Sprinkle Parmesan on top Bake at 350 for 1 hour with foil loosely on top until bubbly. Take foil off bake 15 minutes at 400 degrees until brown on top. Let sit for 10 min. and Cut into 1/4 slices and Enjoy!

The Perfect Vegetarian Omelette

During the holiday's and on the weekends we love this omelette. I call it the perfect vegetarian omelette.

  • 3 jumbo brown eggs
  • 1 cucumber
  • 1 asparagus stalk
  • 1 sprig basil
  • 1/4 tsp. ground black pepper
  • 1/4 tsp salt
  • add in tomatoes slices in halves or mild cheddar shredded cheese
  • 1/4 tsp of olive oil or margarine

Take the asparagus stalk and slice it up finely. Take the cucumber and slice it in rounds. add in your sliced tomato and salt and pepper to taste. whisk together three eggs set aside. Take a cast iron pan add your oil and saute your vegetables until firm and bright. Add your eggs let set in the pan until firm on the bottom. Take one half of the omelet stick a spatula underneath the side , Add you cheddar cheese to the middle of your omelet. Flip over the side and cook until golden brown. Take your omelette out of the pan let cool for 5 minutes and serve with your favorite sausage, veggie bacon or grits on the side.

My Green Bean recipe

The most favorite thing in our house was vegetables, cooked to perfection. My mom loved cabbage and green beans. This is a recipe I made from remembering how she loved white potatoes.

  • 4 lbs of fresh green beans (wash and set aside)
  • 1 lb of peeled baby white potatoes
  • 4 slices of thick cut bacon
  • 1/4 tbsp of vegetable oil or margarine
  • 1 c of water

Fry bacon in hot skillet until crispy. take the white potatoes and put them in boiling water until soft and able to cut into halves. add the potatoes to the skillet with the crispy bacon take your green beans add them to the skillet just until warmed through. turn down the heat on the skillet add a small amount of the boiled water to skillet to cover the bottom of the pan cover the beans let them wilt until tender. Serve warm with chicken or try it cold with your favorite vinaigrette.

Speaking of vegetables, grow your winter vegetables into new casseroles. Here is a recipe I found, I think you'll like it!

Eggplant Meatballs and Spaghetti Squash

My favorite vegetable is eggplant, I love it! Eggplant Parmesan is a favorite from my house. I saw a recipe for spaghetti squash. It's great with eggplant meatballs. I'd like to share this recipe with you!

  • 4 small eggplant
  • 2 spaghetti squash cut in half
  • 2 tbsp. of olive oil
  • 4 c of crushed tomatoes
  • 1/2 c of grated Parmesan cheese
  • 1/2 c of bread crumbs
  • 1 can of tomato paste
  • 1 garlic clove separated cleaned and chopped
  • 1 tsp. sea salt and
  • 1 tsp. ground black pepper
  • 1 tsp. oregano and Italian seasoning
  • 1/2 tbsp of water
  • 1 onion chopped

Peel and chop eggplant into small squares. grease a baking sheet with olive oil add the eggplant. add salt and pepper to the eggplant along with oregano. Put eggplant into a 400 degree oven and cook for 45 min. until tender. Cut your spaghetti squash in half and add the remaining olive oil to the inside and the outside salt and pepper then add Italian seasoning and oregano. Bake for 1 hour until soft and you can pull the spaghetti squash apart with a fork. Take out your eggplant and add it to your processor or use the processor setting along with sauteed garlic and onion. salt and pepper to taste along with oregano and Italian seasoning.

process until the eggplant looks like cornmeal. touch and roll it into your hands. When done make meatballs about 2 inches around. Saute in a hot pan with olive oil and set aside. Put crushed tomatoes into a pot along with tomato paste add onion and garlic salt and pepper to taste. Simmer for 30 min until bubbly and add your meatballs for another 20 min.

Take your spaghetti squash and add your sauce and meatballs into the bowl on top of your squash and Enjoy!

Rhonda's Sausage and Bacon Romoulade baked Sammy

Farm food are fresh and great to have on cloudy days or late nights! This Sammy is perfect for either.

Sammy

  • 1 large loaf of grain bread of your choice
  • 1 b of pickle chips
  • 1 lb of your favorite bacon
  • 2 lbs. of sausage pref. kielbasa
  • 1 small onion
  • 1 whole clove of garlic (peel and crush)
  • 1 lb. provolone cheese (whole slices)

Romoulade

  • 1/2 c of olive oil
  • 1/4 c of spicy mustard
  • 1/4 c of mayonnaise
  • 1/4 c of white wine vinegar
  • 1/2 lemon for juice only
  • 1/2 tsp of fresh parsley

Take the loaf of bread coat lightly with margarine or butter put into a 350 degree oven for 10 min. Remove the bread slice into medium slices, Take the sausage or kielbasa and cut into pieces then fry with the onion and clove of garlic. Add the bacon until crisp and set aside. Next take your olive oil vinegar and spicy mustard whisk together then add your mayonnaise slowly until all the lumps disappear. Add your squeezed lemon juice to the mixture. To make the sandwich open two slices of bread add the Romoulade to each side, Add the sausage and bacon mixture to one side of the Sammy! put the other side on and you may add cheese of your choice of fixings Enjoy! Have pickles as chips on the side or on top of your Sammy!

Appetizers are a favorite! These are a few I saw online and would like for you to try. I made these recipes from scratch please enjoy!

Bacon wrapped dates and olives

  • 1 lb. thick cut bacon
  • 1 jar whole pitted Manzanilla olives
  • 1/2 lb. of dates
  • 1/ 2 c of maple syrup
  • 2 tbs. cinnamon
  • 1 tbs. clove
  • 1 tbs. nutmeg
  • 1 lb. cream cheese
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1 clove of garlic (peeled and crushed)
  • 1/2 tbsp olive oil
  • 1/2 tsp of sea salt and ground black pepper

Fry the red and yellow peppers in olive oil. along with the garlic. set aside. take the thick sliced bacon and brush with maple syrup. Add cinnamon and nutmeg and clove to the bacon slices. take washed and sliced open in the middle dates and olives and set aside. Put the peppers and garlic in a bowl along with the cream cheese and salt and pepper. Mix on high until smooth you can add a few tablespoons of water. When mixed spoon the mixture into the olives and dates. then wrap them with the bacon slices. put into a 400 degree oven and cook until bacon crisps. Serve warm or put into the fridge for company.

Bruschetta

  • 1 or 2 Long French or Italian Rolls
  • 1 sprig fresh basil
  • 1/2 tbsp of Italian seasoning
  • 1/2 c. of Olive oil
  • or margarine
  • 1 pkg grape tomatoes
  • 1/2 c. shredded cheese mozzarella and Parmesan
  • 1 tsp sea salt 1 tsp ground black pepper

Cut the bread into 10 to 12 slices round put the bread spread with olive oil, 1/2 cut grape tomatoes , shredded cheese and salt and pepper into a 400 degree oven for 10 minutes until brown and crispy. Serve warm and Enjoy!

Lasagna chips w bacon cream cheese dip

  • 1 lb lasagna noodles
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 1 tbsp vegetable oil
  • 6 slices of thick cut bacon (cook and crumble)
  • 1 lb cream cheese
  • 1/2 c shredded cheddar cheese
  • 1/2 c. sour cream
  • 1/3 tsp chives

Take the lasagna noodles boil until ( soft but not done)take out of the pot and dry well then cut into triangles. Add paprika, garlic powder, salt and pepper, and olive oil to noodles put into 285 degree oven until brown and crisp.

Fry the bacon in a hot pan until crisp, set aside. Take your cream cheese and sour cream and chives, salt and pepper to taste add to a bowl mix with a spoon mixer until smooth. crumble the bacon and add it to the smooth mixture. Use a small baking dish add the mixture into the oiled dish add cheddar cheese on top put into a 400 degree oven for 15 min. until bubbly and golden brown. Set aside for 5 min. and Use Lasagna chips to dip.

Weeknights are tiring for most of us. We have work and errands as well as kids to feed. These recipes are great meals during the week.

Doritos Casserole

  • 2 lbs ground beef
  • 1 c of water
  • 1/2 can of tomato paste
  • 1 lb ground chicken
  • 1/2 c of red salsa
  • 1 pkg of taco seasoning
  • 1 avocado cut up into slices
  • 1 family size bag of Doritos any flavor
  • 1 lbs shredded Velveeta cheese
  • 1 lb Monterey jack cheese
  • 1 lb of white cheddar
  • 1 tbsp olive oil
  • aluminum foil

Fry ground meats in a hot pan with olive oil. when cooked drain the meat of oil. set aside add red salsa then the meat back to the pan along with the taco seasoning. Follow the package directions for amount of water to add. remember to add half of the water because of the salsa. Stir into meat until blended well. Take an 8 by 9 inch baking dish and spray it with Pam. Crunch up the Doritos for the first layer. Add the layer of meat mixture then the avocado slices on top then the shredded Velveeta cheese. Keep layering until the top layer is avocado and cheese. Put the baking dish into a 350 degree oven for 30 min. covered with foil. Then take it out and uncover the casserole put it back into the oven for 25 min. until bubbly and brown on top. Wait until cool for 5 min. and enjoy with salsa on top or sour cream.

Spanish Lasagna w Chorizo

  • 1 lb lasagna noodles
  • 2 lbs crushed tomatoes
  • 1 can of tomato paste
  • 1 yellow onion
  • 1 red onion
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 4 tomatillos cut up
  • 1 c of black olives eyes
  • 1/2 lb Chorizo cut up
  • 1/2 lb of each Chopped meat pork and beef
  • 1 lb mild cheddar cheese shredded
  • 1 lb Monterey jack cheese shredded
  • 1/2 lb of shredded white cheddar cheese
  • 1/2 lb Colby cheese shredded
  • 1 c of sour cream
  • 1/4 c olive oil

Boil lasagna until cooked. Set aside in cold water

Use 1 tbsp of the 1/4 of cup of olive oil in med hot pan add onions, peppers until clear, then add Chorizo once Chorizo is

cooked add olives and tomatillos. Turn heat down to low and let simmer until thick consistency. Take off heat, take ground beef and pork add it to a hot pan . Let brown once brown set aside. Take same pan, add remaining olive oil and tomatoes to the pan let simmer take tomato paste and add to pan add in the ground meat stir until heated through set aside to cool. Once cool add Chorizo mixture to tomatoes and mix well.

Putting the lasagna together

Add some of the sauce to the bottom of a 8/9 baking dish. Take cooked lasagna line on top of sauce mix then dollop sour cream all over the lasagna then add more sauce, layer your shredded cheese mild cheddar first then Monterey, then Colby. Keep layering lasagna and sauce , dollop sour cream all through the lasagna where you'd use ricotta. then the the three cheeses. On the top layer add the sauce and the three cheeses only. Then brush the top with egg. Cover your lasagna with foil put into 325 degree oven for 45 min. Take the foil off cook for 15 minutes uncovered until bubbling and the edges are brown. Let stand for 10 min. Until cool then enjoy!
