Ingredients:

Stuffing:

-Chicken Breast (3 Breast Pack)

- 1 Package of Cream Cheese

- Small Container of Ricotta Cheese

- 1 1/2 Cups of Spinach (optional)

- 1 cup of Parmesan Cheese

- 1 Cup of Mozzarella Cheese

- 1 Large Egg

-1 Tablespoon of Pepper (Optional)

Crust:

- 2 Packs of Ritz Crackers

- 1-2 Cups of Parmesan Cheese

- 4 Large Eggs

Topping:

- Fresh Cilantro **OPTIONAL

How to Begin:

Fileting the Chicken Breast

First, take your 3 Chicken Breasts and make sure your cut off all fat and dispose of.

Once fat is disposed of, then take each chicken breast and filet them into thin flat pieces. Look at photo for reference!

Filet all your breasts (Make sure you take your time with this) then put them neatly into a pile and to the side. We will come back to them once stuffing if made.

Second, take your pack of Cream Cheese, Ricotta Cheese, Spinach (optional), Parmesan Cheese, Mozzarella Cheese, egg and tablespoon of Pepper (Optional).

Put all of those ingredients into a bowl and get to mixing! You can use a Spoon, Kitchen Aid or what I use are my HANDS! Don't be afraid to get your hands dirty :)

Get all your stuff in that bowl!!!

Mix it on up!!

Once you mix all those evenly together, you should have what looks like a ball of cheese dough ball!

Beautiful Ball!

Now to your next station, take two plates. On the first plate, Packet of Ritz Crackers with 1 cup of Parmesan Cheese and crush them together till you get nice Bread Crump looking Dust. Then on your Second Plate take your 3-4 Large eggs and crack them on the plate. Then Scramble on table.

Your order should be Chicken, Filling, Eggs, and then Breadcrumbs!

Make sure you get a Casserole Dish or Pretty Baking Dish to put your end Result!

Now take one slab of your chicken and place it in the palm of your hand.

Take a donut hole sized ball of your stuffing and place in the center of the chicken and wrap around!

Once wrapped, you take that and cover in your scrambled egg then take that and place in breadcrumbs. Get thoroughly covered!

Then place in your dish!

Repeat this action with the rest of your chicken,

Once you finish stuffing and breading.

Take your left over stuffing and place in any empty holes of dish where chicken is placed.

Then take your left over bread crumbs (if I don't have any left I usually would just make a little more) and sprinkle over the top of the chicken and added stuffing topping!

Bake at 375 Degrees for 40-50 Min, Till its beautiful Golden Brown.

Top it off with some Cilantro *OPTIONAL!
