My top 3 : breakfast

Spinach and cheese egg omelet.

Everyone who knows me and I specify KNOWS me can say I am a huge spinach addict. First I start off by spraying my frying pan with extra virgin olive oil. Of course though you can uses any olive oil or butter fro that matter. Now i must tell you there is 2 ways to create this eggy dish.

Option A.

In a bowl mix 1-2 eggs depending on hour hungry you are with a cup of spinach and a dash of garlic salt. Of course if you love your spinach, put however much you want. Net pour the mixture into you already heated pan. Wait until it it almost fully cooked as to not rip the omelet when flipping. Then of course flip the egg. You almost done! Add cheese to the centre of the omelet then flip. Give the omelet 1-2 minutes to let the cheese melt, then take your spatula and fold in half. Transfer over to a plate , grab a fork , then bon appetite.

Option B.

This one is for all you onion lovers out there. Take one onion and dice it up into tiny pieces. Mince it if preferred. Add your onion and spinach to the frying pan and sauté, bring the flavours together. Remove from pan and set aside for later. whisk 1-2 eggs in a bowl with a splash of milk and a dash of garlic salt.

Pour egg mixture into frying pan and let cook. Once egg is 3/4 cooked flip the omelet over. Next add cheese , and the previously cooked onion and spinach mix to the centre of the omelet. With your spatula fold the omelet in half. Let cook a few more minutes to melt the cheese. Transfer over to a plate and serve.

2. Yogurt and Granola with Banana.

Sometimes when I want something light and easy to make , i’ll reach for the yogurt. Personally my preferred flavours are strawberry , vanilla and peach. For this recipe though I use strawberry. In a bowl add desired amount of strawberry yogurt. Next take a banana and dice it up. Add the diced banana to the top of your yogurt. For the final touch sprinkle a layer of your favourite granola ( I’ve recently discovered a new found love for the strawberry granola mix by MADEGOOD ). Grab a spoon and dive in!

3. B.E.L.T breakfast sandwich/ wrap.

This last yummy breakfast as like the first one can be made two ways. One in the style of a wrap and in the style of a sandwich. I will cover both versions. First off let me clarify for those who are unaware , what B.E.L.T stands for. B.E.L.T in order is: bacon, egg ,lettuce and tomato. Now onto the choices.

Option A : The sandwich

This sandwich is actually simpler than you may believe. First your going the cook all the ingredients you will need. In a heated frying pan using butter of olive oil cook 2-3 strips of bacon until desired look ( everyone has their own preferences of how they love their bacon). Drain pan and set bacon aside. Next in the smallest frying pan you have (I love using one with the circumference of a bagel), cook 1 -2 eggs lightly scrambled depending on how thick you wish your egg patty to be. When egg is almost cooked put one everything bagel in the toaster and toast to your preferences.

Assembly time! start with the bottom portion of the bagel and lightly spread butter or as i like some mayo. Next the layering begins. Place a layer of lettuce of the bagel then lay your egg patty that you made momentarily ago on top of the lettuce. Then layer as follows: slice of cheese , 2 slices of tomato and 2-3 strips of bacon. Of course though you can adjust how much of each topping to your liking. Finally take the top half of you bagel and lightly spread with butter or mayo , then place on top to complete your breakfast sandwich. Now bite in and enjoy.

Option B : The wrap

The wrap is very similar to the sandwich just instead a wrap is in place of the bagel. Instead of an egg patty however we are going to scramble 1-2 eggs in a bowl then cook up in our pan. Cook 2 strips of bacon then that will complete the cooking process. If you like me like a warm wrap nuke a wrap in the microwave for 10 seconds.

With the wrap laying flat on a plate, spread out desired amount of mayo. Let add a leaf of lettuce , scrambled egg and your bacon to the centre of the wrap leaving space at the bottom for when folding it. Add diced up tomato and shredded cheese on top.

For folding the wrap start by folding the bottom of the wrap up about an inch, just covering the ingredients to secure. Fold one side flap over and roll wrap to the the other side. Hold wrap to keep closed and enjoy.
