An exquisite recipe if you want to have a special breakfast is frittata. Although by its name you might think that a frittata is something quite expensive or complicated to prepare, soon you will see that it is a cheap and simple dish to prepare. The following frittata recipe is prepared using three different varieties of mushrooms, which makes it an excellent breakfast for vegetarians. Get ready and prepare today a simple but tasty mushroom frittata.

What is a frittata?

The frittata, from the Italian fritto (participle of the verb friggere (to fry) and from the Latin frixùra), is a specialty of Italian cuisine similar to the Spanish omelette and that is usually filled with different ingredients such as meat, vegetables, cheeses, mushrooms etc.

In Spain there is the internationally known potato tortilla and in France there is the omelette, which, unlike the frittata, must remain creamier and the other ingredients are added at the end of cooking, when the omelette is folded on itself. In Germany and Austria, the omelette is served in the form of pancakes cut into strips and rolled up, it is served in broth. Instead of being made in the form of a leaf like the rest of the tortillas, the Frittata is opened and the condiments are placed on top (similar to pizza). It can be prepared in a similar way to the Spanish tortilla.

One of the most widespread frittata preparations is frittata di cipolle (onion). It is a dish based on the Italian popular tradition and is composed of onions (preferably white) that are fried in abundant olive oil, eggs, salt, melted cheese and a hint of pepper. Frittata di cipolle is a dish of humble people and in the last century it was often consumed by workers during the day. Today it is accompanied with various ingredients and can be ordered in almost any restaurant in Italy.

Frittata di maccheroni is prepared by reusing leftover pasta such as spaghetti or vermicelli, eggs, tomato, olive oil, garlic, salt and pepper. This dish is also quite common in Sweden and Finland, in many varieties, made with meat or fish.

Mushroom Frittata

Ingredients

1 cup whipping cream

½ cup grated Parmesan cheese

1 cup fresh shitake mushrooms

1 cup of mushrooms

1 cup sliced fungi

½ cup chopped parsley

4 eggs

How to make

Beat the eggs with the cream, half the mushrooms, half the cheese and season with salt and pepper.

Pour the mixture into a baking sheet, place the rest of the mushrooms, cheese and parsley on top.

Bake at 220 ºC for 15 minutes.
