Meatball Subs are made with tenderly fried meatballs simmered in homemade marinara sauce, placed on a roll, topped with mozzarella, and toasted to perfection.

This sub goes well with a side salad and fries or chips. It is great as leftovers, too! Bring one to work for lunch the next day. You'll love it, and the delicious aroma will entice your coworkers to ask for the recipe.

Meatball Subs Recipe

Ingredients:

Marinara Sauce

  • 1 onion, finely diced
  • 3 garlic cloves, finely diced
  • 1/4 teaspoon of red pepper flakes
  • 56 ounces of crushed tomatoes
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 teaspoon of parsley flakes or 1 tablespoon of chopped fresh parsley
  • 1 teaspoon of dried basil leaves or 3 teaspoons of fresh basil

Meatballs

  • 2 pounds of ground meat (I used venison)
  • 2 eggs
  • 1/4 cup of water
  • 1/4 cup of ketchup
  • 1 1/4 cup of dry instant oatmeal
  • 1 tablespoon of Italian seasoning
  • 1/2 onion, thinly diced
  • 1/2 green bell pepper, thinly diced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of Worcestershire sauce
  • 1 tablespoon of olive oil for frying
  • 2 cups of mozzarella, shredded
  • 12 Cobblestone Philly Steak Rolls
  • Getting It Done:

    1. First, make the marinara sauce. In a large kettle, heated to medium-high heat, add 1 tablespoon of olive oil. Put in the onion and salt and cook it until the onions are soft or somewhat transparent. Then add the garlic and cook for two minutes.
    2. Add red pepper flakes, black pepper, and crushed tomatoes. Bring it to a soft boil and turn the heat down to medium-low. Let it simmer for 20 minutes. Stir often to prevent scorching.
    3. Remove from heat and add the parsley flakes and basil. Do a taste test and see if it needs more salt or anything.
    4. Now make the meatballs. Mix all meatball ingredients in a large bowl. Then dampen your hands and dip out a tablespoon full of the meat mixture. Shape it into a medium-sized meatball and set it aside.
    5. Preheat a frying pan to medium heat. Once all of the meatballs are rolled, add 1 tablespoon of olive oil to the frying pan and fry until done, turning them gently during the frying time.
    6. Drain the meatballs of excess fat if needed. Then pour the marinara sauce over the deer meatballs and simmer for 8 minutes.
    7. Remove the meatballs and sauce from the heat and preheat the oven at 350°F.
    8. Place about 5 meatballs into each sub bun and place them on a cookie sheet. Spoon a little extra sauce inside and sprinkle the tops with mozzarella cheese.
    9. Bake the subs until the cheese is melted and the rolls are toasted to your liking.

    You can use store-bought marinara sauce or spaghetti sauce if you don't want to make your own sauce.

    Why do I dampen my hands while forming the meatballs? Damp hands help the meatballs have a smooth consistency, plus the meat will not stick to your hands as much.

    To reheat, it is best if the sub is unassembled. If you're using a microwave, heat the meatballs on a plate until warm. Assemble according to the directions and heat it again until the cheese is melted.

    If the subs are already assembled, you can still heat them in the microwave. First, cut them in half. Then heat for 30 seconds at a time, flipping and moving them around after every 30 seconds until heated thoroughly.

    You can also heat these in the oven, but the bread may become too toasted and hard.
