Love This Lemon Loaf

You have probably reached this page to find a great recipe. We all have different tastes and enjoy different things. One of my favorite hobbies is to bake and try different recipes of the same thing. I am a big fan of the lemon loaf, so experimenting with different recipes was something that I tried, and here is something that works for me. However, this can be dangerous for those who are currently sitting around at home and making, then eating this lemon loaf can result in happiness and weight gain resulting in you becoming the definition of Koala bear happiness (as I like to call, being fat and happy). This recipe is meant for dry climates such as Alberta, and Saskatchewan.

The ingredients you will need:

-Eggs

-Sugar

-Flour

-Lemon Zest

-Lemon Extract

-Baking Powder

-Vanilla Extract

-Sour Cream

-Salt

-Poppy seeds

Now, many people like to create a glaze that goes on top of the lemon loaf, but in my experience, it ruins the flavor a little bit. So, I avoid using it, and it makes the lemon loaf seem really sweet, where it hurts your teeth when taking a bite and our goal is to create happiness.

Anyways, you first combine 3 large eggs and 1 cup of sugar in a bowl. The best way is to whisk the ingredients, you can also you a hand-held mixer if you prefer. You want to mix it enough so that there are no lumps and so it looks smooth.

Next, add one and a half tablespoons of lemon extract. (The half adds a more lemon-y taste to it). Take 1 lemon and add the zest to the mixture directly, use a rubber spatula to mix it in. Next, add two teaspoons of vanilla. Now, it should be smelling like a lemon loaf in progress. Take out sour cream from the fridge. After, add in 1 and a half cup of flour. You can either use a spatula or a hand-held, but I find with the handheld mixer the flour tends to explode. Add 1/4 teaspoon of salt, add 1/4 teaspoon of baking powder and mix it with the spatula again. Add 1/4 of a teaspoon of baking soda as well. Now, add 1/3 of a cup of sour cream that you have removed from the fridge earlier. Finally, take half a cup of poppy seeds and add them in (this is optional). If you plan on using a standing mixer like a kitchen-aid set the power to 4 or 5, and let it mix for 3 minutes or less, the texture should be creamy, fluffy, and beautiful.

The oven should be preheated to 325 in Fahrenheit, which is approximately 163 in celsius. Spray an 8 x 4 baking pan and line it with parchment paper. (This is to ensure the loaf comes out perfectly). You can have some paper sticking out as it will help with the pulling-out process. Bake for 55 minutes or until the testing stick comes out clean. Take a wooden cutting board or a cooling rack and remove the loaf using the paper that was sticking out from the pan. Then as it cools down on the rack or wooden board remove the paper. Once the loaf is completely cool slice up the bread and serve it with an English Breakfast tea or an Early grey as this is the best combination. Enjoy it and become Koala happy.
