“Bikini season is just around the corner unfortunately, so is the taco truck.” We all know that one food truck that is sinfully delicious, with long lines worth the wait and food that is not your typical mainstream munchies. Thus, the idea of a food truck themed Super Bowl party was born! What a FANtastic way to kick off Super Bowl LV with food that will make you want an instant replay! Down, Set, Hike! Make way for the real MVG, Most Valuable Goodies.

Game Plan

Appetizers - time for the warm up! Limber up your bellies and get ready for that first down.

Corn Ribs Blitz: 30 mins

Ingredients:

x amount of corn on the cobs

4 tbsp of butter or olive oil

1 tsp lemon pepper ⁣

1/2 tsp garlic powder⁣

1/4 tsp chili powder⁣

1/4 tsp black pepper⁣

1/2 tsp smoked paprika ⁣

Chipotle Lime Mayo:⁣

1/2 cup Mayo

2 tsp chipotle peppers in adobo sauce ⁣

juice of 1/2-1 lime (to taste) ⁣

salt to taste⁣

Cotija cheese for topping⁣

chopped cilantro for topping⁣

Corn ribs are smacked down with loads of flavor! With your guest list already in mind, grab your desired amount of corn (one full corn on the cob creates four corn ribs). Preheat your oven to 375 degree fahrenheit and begin rinsing off your corn on the cob. Carefully cut the corn into four pieces, cut once in half and then cutting those two halves in half again. In a bowl add butter and mix in spices, have fun and create your own flavors to come up with the perfect flavor for you! Now brush the newly created butter mixture onto all the corn pieces and pop into your preheated oven for 25 minutes. Keep an eye on your corn ribs to prevent overcooking, take out when they are nice and curled or leave in a bit longer for a charred effect. Mix up chipotle lime mayo sauce while cooking. Grab a separate bowl and add mayo, lime juice, and chipotle peppers in adobo sauce with a sprinkle of salt. After corn is cooked to your satisfaction, pull out of the oven and top off with your sauce and toppings.

Skillet Queso Dip Scoop & Score: 20 mins

Ingredients:

16 ounce block Velveeta cheese

1 can no bean chili

1/2 chorizo

1 cup milk

1 jalapeno (or more depending on level of spice desired)

2 tsp chili powder

2 tsp paprika

½ tsp cumin

tortilla chips

No substitutions necessary here, we’re playing all 4 quarters! This recipe will get you all the right points in all the right places like a much needed field goal. Grab your go to cooking pan and cook the chorizo. Chop up jalapenos into small pieces while chorizo is cooking. Once cooked gather all ingredients and add into the same pan (for a smoother texture put chili in a blender). Stir until the cheese is melted and all ingredients are mixed well. Bust out your favorite tortilla chips and enjoy the dip guaranteed to win the MVG title!

Entrées- alright it's time to get serious and score some touchdowns!

Hot Dogs- spiked edition! 25 minutes

Ingredients:

X hot dog buns

X hot dog franks

2 tbsp of melted butter (for buns)

1 can condensed cheese

jalapeno slices

Hot Cheetos

toppings of choice (pickles, onions, mustard, ketchup, relish)

Spiked hot dogs are turnin’ up the heat! Start by placing savory franks on the grill with low flame. You may also boil the franks or bake on the stove depending on preference. Preheat the oven to 350 degrees fahrenheit and warm up the condensed cheese on the stove. Check the franks and rotate to get a good crispy cookin’ all around. Grab your melted butter and begin buttering the inside of the hot dog buns. Once buttered, place on a cooking sheet and let bake for 6 minutes for a nice toasty texture. After everything is finished, put together your personalized dog. Spiked hot dogs include ketchup, mustard, cheese, Hot Cheetos, and jalapeno slices inspired by The Dogfather in San Antonio, TX.

Play Action Street Tacos- Beef, Chicken, and Vegan. You'll easily be fooled which one is vegan once you take a bite! 25 mins

Ingredients:

Chicken/Beef:

approx. 2 tbsp olive oil

1 pound steak (skirt and flank work best) or chicken breast

ground chipotle powder

chili powder

cumin

salt

white corn tortillas

white onion

cilantro

hot sauce or salsa

diced tomato, optional

Vegan:

1 young green jackfruit (not sweet one in syrup)

½ white onion

½ garlic clove

1 tbsp Agave

1 tsp salt

lime juice (to taste)

Mission brand tortillas (or any vegan tortilla of choice)

Chicken/Beef:

Finely slice 1 pound of meat of your choice (beef or chicken). With about 2 tbsp of olive oil, oil up a pan and add meat on a medium high flame. Stir until cooked (if beef until pink is all gone). Add in 3/4 tsp of ground chipotle powder, 1/2 tsp chili powder, 1/2 tsp cumin and, 3/4 tsp salt. Mix well! Warm up tortillas in a pan to a nice crisp. Add meat and toppings of choice such as onions, lime, cilantro, jalapenos, cheese..etc

***We will also be using this beef for our steak nachos.

Vegan:

Action play passes in motion! These jackfruit tacos have just enough taste to pass off as a regular taco, here’s the power play! Start by cutting up your onion, garlic, and jackfruit. For optimal results cut jackfruit from the center out. Saute onions and garlic until onions are a light brown. Add in jackfruit, lime juice, and agave. Let cook and marinate in mixture created, add salt and taste to see if more lime or agave is needed. Heat up tortillas and voila! Dress up with greek yogurt, lettuce, and your favorite veggies! Our family vegan and non-vegans approved of this recipe!

Juicy Beef Tacos From @TaquitosWestAve Recipe Inspo

Down Field Crispy Dogs- they'll be traveling down to your belly! 15 mins

Ingredients:

1 pack corn tortillas

X hot dog franks

1 pack American cheese

olive oil

toothpicks

toppings (sour cream, cheese, jalapenos, salsa, guac..etc)

Down field crispy dogs never tasted so good! Trust me, you’ll be eating more than 1! Pour olive oil halfway into a pan on a medium flame. Grab a pack of franks and slice a half slit down the middle of all the franks. Get the American cheese and cut desired slices in halves. After all the cutting place the cheese inside the sliced franks and wrap the frank with cheese in the corn tortillas. Secure all compounds with a toothpick and set in the pan to fry. Watch the crispy dogs for a golden crispy color (they cook quickly). Remove toothpicks, place on a plate with a napkin, and add desired toppings! ***BE MINDFUL OF TOOTHPICKS

Steak Nachos- PILE it ON me! 20 mins *(meat already prepared)

Ingredients:

Steak:

½ pack cooked bacon

Beans:

2 tbsp bacon fat

1 tsp salt

2 cans refried beans

1 tbsp chicken broth

Nacho Toppings:

1 bag tortilla chips

12 oz shredded Cheddar cheese

12 oz shredded Monterey Jack cheese

1 avocado

1 chopped ripe tomato

1 chopped jalapeno pepper

½ cup sour cream

½ cup chopped fresh cilantro

If anything is Lombardi Trophy worthy, it’s these steak nachos! Start by cooking ½ a pack of bacon. While bacon cooks, chop your tomato, jalapeno, and cilantro. Once bacon is cooked chop it up and mix it in with the beef. Open up your cans of refried beans and add it to the pan used to cook the bacon absorbing the grease for flavor. Add salt and broth and mix well. Once the beans are heated add to tortilla chips along with meat and plenty of cheese. Now it’s time for toppings, add sour cream, jalapenos, tomatoes, cilantro and more for a finish you’ll love!

Snacks- go big or go home empty handed!

Nacho Hot Cheetos- Red Zone!

Ingredients:

Hot Cheetos

tortilla chips

1 can condensed cheese

jalapeno slices

It’s simple yet classic with a taste so irresistible! Mixing Hot Cheetos with regular nachos and topping it off with jalapenos. It’s 1 step easy, yet effective! Warm up the cheese and done (add sliced bacon for some extra flair).

Mangonadas- any given Sunday!

Lastly, mangonadas! Always ready to eat on any given Sunday...or any day at that! For the win these icy delectables are the only holding we condone! Pick up a mangonada base from your local candy store. Depending on your guest count choose the right size catering to you (8oz, 12oz, 24oz ,32oz etc). Grab a cup and cover with chamoy from the rim and the inside. Scoop 2 beautiful round scoops of your mangonada mix into the cup. Add more chamoy on top and begin adding your pre cut pickles, a tamarindo stick, and gummy bears if you’re feeling wild! Top off with lucas and a sprinkle of Kool-Aid for the most fun snack of Super Bowl LV!
