Cooking healthy, cheap, and vegan can be quick and easy! Here is a kosher recipe I have put together for the modern vegan. Something that is savory to the taste buds, and protein dense for the body. Whether you're rushing and need to make something quick, looking for something to add to a dish you already have, or want to try something new. Which ever it might be this is a delicious and nutrient packed soup for you to try.

Keep in mind that it is a light lunch with the lentil pasta and the soup itself, but for post workout or dinner adding grilled cheese bites makes it a delicious full meal in itself. Great for a quick dinner or lunch recipe whenever it fits the occasion. Nothing like a good bowl of soup and a grilled cheese on a cold day! Kids probably wouldn't be the most fond of this recipe but you never know.

Like many recipes you want to tweak it to your liking. Of course there is no wrong way, but this is the way that I make it and I like it. It is filled with plant based proteins, vegetables, spices, and most importantly yummy flavor! This recipe, depending on what you're having it with, can be up to 4-6 servings. Use your best discretion as serving sizes vary with vegetables etc. added to your taste preference. So here goes:

Ingredients:

  • 3.5-5 cups Lentil Rotini With Beet and Ginger ( Pasta Lensi )
  • 4 cups (1 carton) Super Greens Creamy Soup ( Imagine Organic )
  • 1-2 clove organic garlic finely minced
  • 1/4 finely chopped white onion
  • 1/4 cup organic hemp heart seeds for garnish
  • 1 tsp sesame seeds
  • Nutritional Yeast ( Bragg )
  • 2 tsp. turmeric, dill weed, cayenne, salt and pepper to taste
  • Any preferred chopped vegetable ( Peppers, Mushrooms, Spinach, Celery, etc. )
  • (For a thinner consistency and more servings you can add 1 can unsweetened coconut milk)
  • For added yumminess and nutrition wait go bellow for a quick and easy vegan grilled cheese bites recipe! :)

Step 1. In medium sized pot Bring pasta water to boil with splash of olive oil

Step 2. In medium frying pan drizzle olive oil and fry onions and garlic until they are golden. (If adding mushrooms add them at this step)

Step 3. Cook lentil pasta or pasta of choice accordingly to directions ( Lentil pasta takes 5-7 minutes )

Step 4. While pasta is cooking stir spices into frying pan to absorb all flavor, and add any added vegetables and cook to your preference

Step 5. In large pan heat up Imagine Organic Super Greens Creepy soup on medium heat, add seasoned vegetables, Lentil Pasta, and any additional spices/herbs

Step 6. Cook until comes to low boil and take off heat

Step 7. Let cool and serve

Step 8. Garnish with hempseeds, sesame seeds, nutritional yeast, and any other garnish of your choosing

Quick and Easy Vegan Grilled Cheese Bites

2 pieces= 4 Bites

4 pieces= 8 bites

6 pieces= 12 bites etc.

Ingredients:

  • Seven Sprouted Grain Ezekiel bread (Frozen bread section)
  • Daiya Provolone Style Slices (Vegetarian section)
  • Organic baby spinach
  • dill weed (dried )
  • organic olive oil

Step 1. Add enough olive oil in pan to cover both pieces of bread

Step 2. Put one piece of provolone cheese on each slice

Step 3. Add desired amount of organic baby spinach between slices and put together cooking to desired level of crispiness and adding dill weed on each side while frying

Step 4. Cut diagonal both ways and serve on the side with soup for added calories, nutrients, and enjoy! :)
