Day 1

Breakfast

BACON MINI QUICHES (MAKES 8)

What you will need:

Eggs 14

Provolone cheese 2/3 cup

Coconut cream 1/3 cup

Coconut oil 1 tablespoon

Bacon 4 slices, cooked and diced

1. Preheat oven to 190 degrees

2. Crack eggs into a bowl and whisk

3. Add the bacon pieces and stir well.

4. Add the coconut cream and provolone cheese, whisk until all ingredients are combined

5. Add salt and pepper for taste (optional)

6. Pour the mixture into a muffin tray, leaving some room so the quiches can rise

7. Cook for about 25 minutes or until golden brown

Day 2

Breakfast

RASPBERRY COCONUT FLAKES (MAKES 1)

What you will need:

Raspberries 2 tablespoons

Chopped pecans 1 tablespoon

Coconut flakes 1 tablespoon

Almond milk

1. Mix all ingredients into a bowl

2. Add a dash of almond milk

Day 3

Breakfast

Pepper egg bites (makes 8)

What you will need:

Red pepper ¼ roasted and diced

Sliced ham 1 sliced

Eggs 6

Cottage cheese ¼ cup

Mixed herbs 2 tablespoons

Mild provolone cheese ¼ cup

Mild cheddar cheese 2 tablespoons (grated)

Butter 2 tablespoons

(This recipe uses a poaching pan)

1. Cut the slice of ham into small strips

2. Add the eggs and cottage cheese in a container (preferably a jug)

3. Then add the provolone and cheddar cheese

4. Add the mixed herbs (Chives can also make a good substitute)

5. Add the butter and blend until smooth

6. Add the diced pepper

7. Add salt and pepper (optional, for taste)

8. On a high heat; add water to the poaching pan and press 1 strip of sliced-ham into each well.

9. Once the water simmers, turn the heat down to a medium-low heat

10. Fill each well with the egg and pepper mixture. Cover. Cook for five minutes or until the centres are solid.

Day 4

Breakfast

DARK CHOCOLATE PORRIDGE (MAKES 1)

What you will need:

Ground almonds ½ cup

Coconut milk ½ cup

Water ¼ cup

Truvia 1 teaspoon

Dark chocolate chips ½ cup

1. Heat the coconut milk and water on a medium-low heat

2. Add in the ground almonds and truvia, mix well

3. Stir for five minutes

4. Add chocolate chips until thoroughly mixed

5. Serve hot.

Day 5

Breakfast

BACON EGG FLOAT

What you will need:

Eggs 1

Bacon 3 strips

1. Preheat oven to 180 degrees

2. Cut the bacon strips in half (six pieces)

3. Lay three strips side by side on a baking tray

4. Fold two pieces of bacon on to themselves.

5. Then taking another strip of bacon, lay it across the flat piece of bacon and unfold the other two pieces, so they lie over the strip you just placed

6. Fold the middle strip of bacon on itself and lay another strip of bacon across the two remaining flat ones

7. Unfold the middle piece of bacon

8. Repeat 4&5

9. Separate the egg white and yolk (try to keep the yolk intact)

10. Whisk the egg white until it forms a white foam

11. Spoon the egg white onto the bacon, make a small dip and add the yolk

12. Sprinkle lightly with parmesan cheese and paprika.

13. Cook for ten minutes, until bacon is cooked and the eggs turn golden

Day 6

Breakfast

STRAWBERRY BUNS (MAKES 3)

What you will need:

Almond flour 70g

Truvia 2 tablespoons

Xanthan gum 1 teaspoon

Egg 1

Provolone 1 ½ cups, grated

Cream cheese 2 tablespoons

Strawberry sauce

Truvia 2 tablespoons

Xanthan gum ¼ teaspoon

Water 1 tablespoon

Lemon juice 2 teaspoons

Strawberries ½ cup

Dough

1. Preheat oven to 190 degrees.

2. Mix together the almond flour, truvia and xanthan gum. Then add the egg.

3. Slowly melt the provolone and cream cheese together with a medium-low heat. Once heated, remove from heat.

4. Mix the almond flour with the melted cheese. Knead for two minutes.

5. Split dough into 3 pieces.

6. With each piece, pat into a circle (not too thin.)

7. Lightly coat in butter

8. Place buns in the oven for 20 minutes, although this can be longer if necessary. Leave to cool

Strawberry sauce

9. Whisk the Truvia and Xanthan gum together in a saucepan. Slowly add the water and lemon juice while you are whisking.

10. On a medium-high heat, add the strawberries and constantly stir. Leave on heat until the sauce starts to simmer. Take off heat and leave to one side to cool.

11. Spoon plain yoghurt on to the buns and generously drizzle with strawberry sauce.

Day 7

Breakfast

SCRAMBLED EGG AND TOMATO (MAKES 1)

What you will need:

Eggs 2

Coconut cream 2 teaspoons

Parmesan cheese ½ cup

Tomato 1 diced

1. Crack eggs into a bowl, add the coconut cream and parmesan cheese

2. Whisk with a fork

3. Stir in tomato

4. Melt a small amount of butter in a frying pan on a medium-high heat.

5. Add the egg mixture. Stir slowly when the bottom begins to cook. When all the egg is cooked and the cheese has melted, pour onto a plate.
