It's Always "Super Bowl" with these Recipes
It's Vegan special!!
I have always been a fan of "Super Bowls"; You know, as long as the bowl has food. Food that tingles your taste buds while the game gets on your nerves. Nothing brings family and friends together like the game day. SuperBowl, Wimbledon, Cricket World Cup, it doesn't matter which tribe you belong to, emotions run high during the game. You'd be remiss if you do not have crunchy, tasty savories in your mouth while your eyes are feasting on the tv.
These recipes are extra-special because they are vegan. Being a vegetarian all my life (And a vegan for a few years), most of the dishes I eat are vegan by nature. I know, I know. Vegan and SuperBowl might not go hand in hand, as per the tradition. But these recipes are so good you'll forget they are vegan and gorge on them like never before. I'm carefully selecting the dishes I like so much, to cater to your needs. So, invite your friends, sit back and enjoy the game day. I'm sure your vegan friends(and non-vegan also) will appreciate your efforts in accommodating them.
Here are 5 recipes to scintillate your taste buds. (Bonus point - They take less than 30 minutes to prepare, some even less)
1. Rice Cutlet - Crunchy and Flavorful
Ingredients:
Cooked Rice - 1 cup
Potato (Boiled and Mashed) - 1 no
Chopped Onions - 1 tbsp
Chopped Ginger - 1 tbsp
Chopped Garlic - 1 tbsp
Chopped Green Chilli - 1 tbsp
Grated Carrot - 1 no
Corn - 2 tbsp
Finely Chopped Coriander Leaves - 2 tbsp
Finely Chopped Mint Leaves - 2 tbsp
Chilli Powder - 1 tbsp
Cumin Powder - 1 tbsp
Turmeric Powder - 1/2 tbsp
Salt
Garam Masala - 1/2 tbsp
Lemon Juice - 1 tbsp
Oil
Preparation:
1. Put all the ingredients in a bowl(except for oil) and mix them well.
2. Grease your hand with oil, make a small ball of the mix, roll, and flatten it into a patty.
3. Preheat a pan, add oil, and shallow fry the patties on both sides until they are golden brown. Strain the excess oil before serving.
Sides to go with: Mint Chutney, Ketchup.
Bonus: You can use the patty as a Burger patty too.
2. Golden Fried Baby Corn - Crispy and Savory
Ingredients:
Baby corn - 10 nos
All Purpose Flour - 1/4 cup
Corn Flour - 1/4 cup
Chill Powder - 1/2 tbsp
Turmeric Powder - 1/2 tbsp tbsp
Garam Masala - 1/2 tbsp
Pepper Powder - 1/4 tbsp
Ginger Garlic Paste - 1/2 tbsp
Finely Chopped Coriander Leaves - 2 tbsp
Salt
Water
Oil
Preparation:
1. Boil baby corns until they are soft.
2. Take all the ingredients in a bowl(except for oil and baby corns), add some water, and mix them to form a smooth batter.
3. Dip the baby corn in the batter and deep fry it in oil (2 or 3 at a time) until it is golden brown. Strain the excess oil before serving.
Sides to go with: Mint Chutney, Ketchup.
3. Peanut Laddoo Balls - Sweet and Healthy
Ingredients:
Roasted Peanuts - 1 cup
Grated Jaggery - 1/2 cup
Preparation:
1. Dry-roast the peanuts in a pan for 2 minutes until it changes color. Do not let it burn.
2. Transfer it to a bowl and let it cool. Crush the peanuts with your hands and blow off the skin.
3. Grind the peanuts in a mixer. Add jaggery to the mixer and grind again. Mix it with a spoon, remove the mix sticking to the sides, and grind it again until grinding the peanuts gets hard.
4. Transfer it to a bowl and shape it into small round laddoos or balls.
4. Kheer - To Satisfy the Sweet Tooth
Ingredients:
Almond milk - 500 ml
Pre-soaked rice - 1 cup
Jaggery - 3/4 cup
Cardamom
Preparation:
1. Cook the soaked rice. Once cooked, add almond milk to it and cook it on low flame.
2. Mix almond milk with jaggery and heat it on low flame for 1 minute.
3. Mix the jaggery syrup with rice-almond milk kheer and cook it for 10 minutes. Add cardamom for flavor.
5. Masala Chai - The Finisher Drink
Ingredients:
Almond Milk
Cinnamon Stick - few
Cloves - few
Cardamom - few
Ginger - Small Piece
Tea Powder / Leaves
Sugar
Preparation:
1. Crush the spices (cinnamon stick, cloves, cardamom, and ginger) and add them to hot water.
2. Add tea leaves to it and bring the water to boil.
3. Strain the water into a bowl and add almond milk to it. Add sugar to taste.
