Cookie recipes for the Holidays
It’s that time of the year again. Making treats for the holidays can be a chore in itself. Holiday cookies can be served as a holiday treat before and after Christmas dinner or given as gifts in a nicely decorated Christmas coffee mug, or a holiday cookie tin. Here are some easy step by step cookie recipes to get you and your family in the Christmas spirit.
Sugar Drop Cookies
INGREDIENTS
1 cup of butter softened to room temperature
1 1/2 of granulated sugar
1 egg
2 1/2 all-purpose flour
3 teaspoons of vanilla extract
1/2 baking powder
1 teaspoon of salt
1/2 teaspoon of baking soda
1 cup of pecans (if desired)
INSTRUCTIONS
Preheat oven to 350 degrees F
Lightly grease baking sheet with cooking spray
In a large bowl, cream together butter and sugar
Add egg and vanilla and mix
In a separate bowl, add in flour, baking powder, baking soda, and salt
Add dry ingredients into wet ingredients, stir and combine
Once mixed scoop cookie dough with a spoon and place on baking sheet a couple of inches apart
Bake for 12 to 13 minutes
Cool cookies for a few minutes and remove to a cooling rack to cool completely.
Chocolate Chip Cookies
INGREDIENTS
3 cups of all-purpose flour
1 cup of granulated sugar
1 cup of brown sugar
2 eggs
2 teaspoons of vanilla extract
1 cup of softened butter
1 teaspoon of baking soda
½ teaspoon of salt
1 ¼ cups of chocolate chips
INSTRUCTIONS
Preheat oven to 350 degrees F
Cream butter, white sugar, and brown sugar. Beat in eggs, one at a times. Add baking soda in hot water. Mix in vanilla extract. Stir in flour, salt, and chocolate chips.
Once mixed scoop cookie dough with a spoon and place on ungreased baking sheet a couple of inches apart. Bake for about 10 minutes until edges are browned.
Cool cookies for a few minutes and remove to a cooling rack to cool completely.
Peanut Butter Cookies
INGREDIENTS
1 cup of melted butter
1 cup of white sugar
1 cup of brown sugar
2 eggs
2 ½ cups of all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda
1 cup of peanut butter
1 teaspoon of vanilla extract
INSTRUCTIONS
Preheat oven to 350 degrees F
Cream together butter, sugars, eggs, and peanut butter in one bowl.
In another bowl add flour, baking soda, baking powder and salt. Blend in wet ingredients on low speed until combined.
Scoop dough out and shape into balls, and place on baking sheet 2 inches apart. Once all balls are placed on baking sheet, take a fork and flatten cookie dough, and repeat in the other direction.
Bake cookies for about 9 minutes. Remove and let cool on baking sheet for 5 minutes.
Chocolate Cookies
INGREDIENTS
1 cup of all-purpose flour
½ teaspoon of sea salt
1 teaspoon baking powder
¼ cup of unsweetened cocoa powder
½ cup of butter
1 cup of chocolate chips
¾ cup of brown sugar
1 cup of white sugar
2 eggs
1 teaspoon vanilla extract
1 tablespoon of sea salt
Nonstick cooking spray
INSTRUCTIONS
Preheat oven to 350 degrees F
Combine flour, cocoa powder, ½ teaspoon of sea salt, and baking powder in a bowl.
Place butter in saucepan and melt. Add in chocolate chips and stir until melted. Remove mixture from heat.
In a large bowl, combine white sugar, brown sugar, vanilla extract, and eggs until creamy. Stir in melted chocolate mixture until combined. Fold in Flour mix until completely combined.
Drop spoonful of batter onto greased baking sheet.
Bake in oven for 12 to 14 minutes. Immediately sprinkle with sea salt if desired.
Place baking sheets on wire rack and cool for 20 minutes, then remove.
Now a variety of cookies can be made for friends and family for the Holidays. Enjoy!
