Here is a recipe that literally just popped into my head. It is meant so be a delicious, savory dish; comfort food you can enjoy alone, in the company of coworkers, family, and or friends, in spite of your differences. Essentially, the intent behind this dish is enjoyment and bringing people together! With the fear and dread caused by COVID-19, nothing is certain, and we don't know if/when this pandemic will come to an end. However, one thing is CERTAIN: this time above all others definitely calls for a LOT of comfort food.

This is a recipe for a simple dinner that is made with affordable, diverse ingredients. It can be made by someone who has never cooked a day in his life, someone who is just learning to cook, or even a professional chef. It is made with wholesome, natural ingredients. If one is environmentally conscious, and he or she would be inclined to do so, this meal could be prepared with free range meat, and pesticide-free, organic produce.

The dish aims to provide a variety of flavors, textures and tastes for even the least sophisticated palate. With all the rich flavors that constitute this meal, parents might even get their KIDS to eat their vegetables! For those that are health conscious, there is a variety of nutrients, vitamins, and minerals that can be enjoyed by all. It can even be made vegetarian with tofu, bean curd, or Seitan. While this dish is served hot after cooking, it CAN be eaten cold if you so desire. If you do NOT like chicken, you can use ground beef or turkey.

Not to go on, and on, an on...but this dish is perfect for singles, couples, families, picky eaters, confirmed bachelors, and many other people. It is the kind of dish that I BELIEVE can make the least talented people look like gourmet chefs. Once the leftovers are put away, there isn't much cleaning to be done. Paper, or plastic plates? Just toss them in the trash, push in your chair, and you are free to live stream the latest episode of Game of Thrones!

Without further a do, I present to you, the recipe for Fennel Chicken Stirfry: A Zesty Delight.

1 Tablespoon of Olive Oil

2 pounds of ground Chicken

1 chopped Onion

1 sliced Carrot

1 sliced bulb of Fennel

4-6 cloves of Garlic

1 Tablespoon of Paprika

1 Tablespoon of Cayenne Pepper

8 ounces of rice noodles

Step #1: Coat your skillet with a Tablespoon of Olive Oil.

Step #2: Chop the Onion.

Step #3: Slice the Carrot.

Step #4: Slice the Fennel

Step #5: Crush your cloves of Garlic

Step #6: In a separate bowl, mix the ground Chicken with the Garlic, Paprika and Cayenne Pepper.

Step #7: On a seperate burner, boil your water and cook your rice noodles.

(All of this can be done while your skillet is heating up.)

Step #8: Once your skillet is hot, pour in the vegetables. Let the Onion become translucent, and the Carrot, and Fennel become softer.

Step #9: Add the meat, and cook until it is no longer pink, or it is the color you desire.

Step #10: Cool, and serve with the noodles, or separately, and enjoy!

Now, one doesn't simply eat lunch or dinner by itself. We typically like to have a drink with our meal. Do you like wine? GREAT! I do as well. I'm no expert, but I think this dish would pair well with a nice RED. Some of my FAVORITES include: Malbec or Merlot. Now that I think of it, this perhaps might even go well with a Cabernet Sauvignon. Don't like wine? No problem! This could also pair well with a nice beer, lager OR ALE. Some of my favorites include: Duvel, Saranac Dark Ale, Sierra Nevada Pale Ale, Land Shark, or Blue Moon. In reality, this meal can be paired with the beverage of YOUR CHOOSING.
