Fast and Easy Rice and Vegetables Recipe

Easiest Version of Yellow Rice and Vegetables

I’ll start by saying that this recipe will feed two people or more, but it is also a great option for feeding just one as well. One of the greatest things about this is that you can make it once and then make two meals off of it. Obviously, if you are going to feed more than two people then you just have to increase the amounts of each ingredient and you will have enough to feed everyone.

What You Will Need

  • • A pack of yellow rice. Size depends on the amount you want to make.
  • • Red bell pepper
  • • Green bell pepper
  • • Yellow bell pepper
  • • Cucumber
  • • Minced garlic
  • • Salt (optional)
  • • Pepper (optional)
  • • 2 eggs
  • • Greek seasoning (optional)
  • • Olive oil
  • • Avocado (optional)

First, boil some water in a pot and place the two eggs in the pot with a tiny bit of salt to help the water start boiling faster. Yes, in other words, hard boil the eggs. Best to put them on now so you don’t have to wait for them a little later.

Second, follow the directions on the pack of yellow rice to begin boiling the pot full of rice. As the rice starts to boil, add some Greek seasoning and salt. The amount will be to your own taste. Allow the rice to cook slowly and keep an eye on it. Remember, generally rice doesn’t take very long to finish cooking. While your eggs boil on one stove eye and your rice on another, begin chopping up the three colored bell peppers, cucumber, and any other vegetables you want to include. Be sure to chop them all up so that they are very small. Again, how small will be up to your own judgement, but it’s a good idea to be sure that each piece is small enough to not be a choking hazard once mixed together.

In a large mixing bowl, mix together all of the chopped-up veggies except for the avocado, and add any further seasoning you desire. Add your desired amount of the minced garlic into the bowl as well. Now, pour a little of the olive oil into the bowl and over the vegetable pieces. Slowly mix the contents in the bowl around to ensure that the olive oil coats over the pieces. Once you are satisfied with that, place a medium to large frying pan on the stove and pour some of the oil into the pan. Place the eye on or near high and allow it to heat up well.

Slowly pour the vegetables from the bowl into the frying pan and mix them around in the pan as you add more and more. Keep them moving around in the pan to sauté them without burning any of them. With a watchful eye, continue until you are happy with how your mixture looks. Be aware that the garlic may cause the steam to take your breath away and cause you (and others) to cough a great deal, so be careful. Opting to add onion to this mixture will make this effect even worse.

Putting the Meal Together

Once all of your elements on the stove have finished and you have turned the stove top off completely, be sure to peel the eggs until they are free of any shell. Get a large serving bowl and empty your yellow rice into the bowl. Now, empty the vegetables into the bowl, including any olive oil that may drain from the pan. There shouldn’t be that much, but it will help to flavor the meal.

After this, add the chopped-up avocado to your final mixture. Then, cut up your hard-boiled eggs while holding them over the bowl, so that the small pieces can fall directly into your mix. Now all that is left to do is to mix everything together in the bowl. Your meal is ready for dinner now. Enjoy what you’ve created.

As a further idea, you can always place the contents of your bowl inside a wrap tortilla shell and enjoy it that way as well. If you prefer to include meat, this would change the meal to something brand new. Perhaps you would rather use white rice. The point is, make it your own and don’t be afraid to experiment with this recipe and create several variations of this dish to best fit your taste. Realistically, this meal doesn’t take much longer to create than it took you to read this post. Now, go fix dinner and enjoy.
