Easy Recipes to Make with Vegetables
Since I am all about vegetables; I wanted to share some of my personal favorites with you.
In the Summertime, there are so many colorful fruit and vegetables to create some delicious food.
So, let’s start with something easy that almost everyone enjoys eating.
Because fruits and vegetables are plentiful during the Summer months; this is an easy recipe for you to change up depending on your favorite fruit.
Salad Recipe
Ingredients:
- 1 – 2 cups of your favorite fruit. For example, you can use cherries, peaches, or plums – your choice
- 1/2 cup to a cup of Arugula or Cilantro
- 1 Tablespoon of Lemon Juice
- 1 Tablespoon of Extra Light Virgin Olive Oil
- 1/3 Tablespoon of Ground Black Pepper
- 1 Jalapeno Pepper thinly sliced

Combine all ingredients in a bowl and refrigerate for several hours before serving.
Tomato Martini Recipe
Moreover, if you are thinking about cocktails; why not make a Tomato Martini? Yup, you’re reading this correctly. In the first place, many people enjoy a martini after work. So, why not kick it up a notch?
Use some of the ingredients you would to make in a martini to create this Tomato Martini. However, if you are not a fan of Alcohol; you can skip the gin or substitute this ingredient.
Ingredients:
- 1 Pint of Tomatoes (look for multi-color tomatoes)
- Dry Gin – You can add a little or a few ounces – you decide
- Ground Black Pepper
- Fresh Lemon Rinds
- 3 – 4 fresh Oregano Sprigs
- 2 Tablespoons of Olive Brine
- Aioli or Horseradish is optional

Of course, you should cut off any tomato stems.
Marinate the tomatoes in as much gin as you prefer. Next, add the rest of the ingredients. If you want a creamy flavor, add some Aioli or make your own horseradish.
Chill and serve!

So, you may not have thought about making certain things out of vegetable. However, for instance, you can make a pesto sauce out of zucchini.
Zucchini Pesto Recipe
When you are looking for something simple, yet healthy to add to any pasta, rice, sandwich, or as a dipping sauce for your chicken or fish; this recipe is perfect.
Ingredients:
- 2 cups of Zucchini grated – this is easy to do with a knife or in your blender
- 1/2 cup of fresh minced garlic
- Basil – I recommend you use a 1/4 to a 1/2 a cup
- 1/3 – 1/2 a cup of Parmesan cheese
- Pine nuts are optional – I recommend toasting a few pine nuts for flavor

To make, toss all of the ingredients in a food processor or blender. Also, add a tablespoon of light extra virgin olive oil.
Also, you can mix this pesto with zucchini noodles or another vegetable noodle.
