How could lettuce wraps be easier?

Trying to find something healthy for you that is also easy to make and can feed a family can be difficult, but these lettuce wraps are the perfect solution. I use chicken in this recipe, but you can substitute in any meat or even substitute in a meat substitute.

Not a fan of pouring my soul out before letting people actually read a recipe so I will cut right to the point and keep the notes at the end of this.

Easy Lettuce Wraps

Bibb or Butterhead Lettuce

Cooked Chicken (Shredded or Sliced) Also works with beef and pork

Scallions (thin diagonal cuts)

Vermicelli (cooked then cooled under cold water)

Kimchi

Fish Sauce Vinaigrette [Momofuku Recipe]

Pickled Rainbow Carrots [Momofuku Recipe]

Alfalfa Sprouts

Half a Lime of Juice and Zest

Sambal (not pictured)

Directions

Mise en place is the first step to success with these lettuce wraps. For those who are not familiar with the term, it essentially means everything in its place in French. Developing this habit will make all your cooking much easier and is the basis of developing these lettuce wraps.

Start by zesting and juicing half of a lime into a small container. Grab a handful of sprouts and mix them together with the lime juice and zest.

I usually take some of the cooked chicken and mix in a little fish vin into it.

Slice the pickled carrots thinly and place them into a ramekin or small container.

Cut the scallions diagonally very thinly and place them into a ramekin or small container.

Cook your vermicelli, wash it under cool water, and set it aside in a medium container.

Place the fish vin and sambal into small ramekins and arrange all of the containers onto the serving table or station.

Make sure you have tiny serving spoons for all of the different accouterments. (If they aren't tiny, it's okay... you are just missing out)

Sit down and dig into your delicious creation!

Notes:

This recipe is great because people can pick and choose how much of each ingredient to add and it also exposes people to some food they may not usually eat. This is also great if you are looking for something light that will still fill you up.

Don't forget to put your own spin on this recipe by adding in different toppings that you may have in your fridge. I honestly came up with this just based on stuff in the fridge, so don't let one ingredient hold you back from pulling this off. Also, the chicken can be subbed for any other meat that you want or even tofu if you want to make the recipe vegetarian!

Fish Sauce Vinaigrette is a staple in many Vietnamese homes and everyone puts their own spin on it. Some versions are fishier, or saltier, or spicier than others, but it can be used on anything and lasts forever. One of the easiest and best recipes that I have learned from the Momofuku book and l truly love it. Try out the XO sauce in the Momofuku book for another great sauce to amp up your lettuce wraps.

The pickled rainbow carrots are also extremely easy to make and can sit in your fridge for months. They are a great snack to have around and make a great garnish because of the vibrant colors they come in. With a relatively mild flavor that grows over time, they are an easy addition to most dishes without adding an overwhelming flavor.
