Easy Healthy Summer Recipes

When it is hot and humid; no one wants to spend too much time in the kitchen. In the Summertime, you can find many fresh fruit and vegetables at the Farmer’s Market or grocery store.

Mozzarella, Tomato & Vegetable Frittata

Easy Healthy Summer Recipes

Whether you are looking for something to make for lunch or dinner; this vegetable frittata will become one of your favorite dishes.

Ingredients

  • 1 – 2 Tablespoons of Extra Light Olive Oil
  • Large eggs (the number of eggs you need depends on how many people you make the frittata for). I recommend 5 – 6
  • 3 – 4 Tablespoons of red tomatoes or sun-dried tomatoes (Personally, I like to use both types of tomatoes for this recipe)
  • Fresh baby-sized mozzarella balls
  • Fresh vegetables – your choice – I recommend either eggplant, summer squash, or zucchini
  • Fresh basil
  • Ground black pepper
  • A pinch of sea salt

To make, heat olive oil and vegetables in a frying pan until soft. I recommend cooking on low heat.

While your vegetables are cooking, whisk eggs and a pinch of sea salt and pepper in a mixing bowl. Next, pour the egg mixture into the frying pan. Cook for approximately 1 -2 minutes.

Finally, add the tomatoes and mozzarella balls for another 2 minutes.

Once your mixture is slightly brown; transfer this to a flat pan.

Add fresh basil, and cut into 4 – 6 slices.

Also, if you are serving this for dinner or have company over; you can easily add a fresh arugula salad.

Spaghetti Aglio e Olio with a Twist

Easy Healthy Summer Recipes

When you have had a long day and don’t have a lot of time to cook; this recipe takes no time at all to prepare.

Ingredients

  • First, boil some water.
  • Spaghetti (adjust according to how many people you are serving)
  • 1/2 cup to a cup of light olive oil
  • 4 – 6 cloves of garlic finely minced
  • Red pepper flakes
  • For a twist, I recommend 1/4 – 1/2 cup of green olives minced
  • Black ground pepper
  • Fresh parsley is optional

While your pasta is boiling, combine olive oil, garlic, red pepper flakes, and olives. Cook for approximately 4 – 6 minutes on medium.

Finally, finish your pasta with black ground pepper.

  • Ingredients
  • Chicken (use as much as you need depending on how many you are serving)
  • 1/2 cup to a cup of light plain or Greek yogurt
  • 1 – 2 tablespoons of fresh oregano
  • Ground black pepper (use as much as you like)

To make this recipe, I recommend first grilling your chicken.

While your chicken is grilling; combine yogurt, and fresh oregano in a bowl. If your mixture is too thick; you may want to add a little water to thin out your mixture.

Next, pour a little of the marinade over the chicken and place it in a serving dish. Also, you may want to have a little extra marinade on the side in case someone prefers their chicken plain.
