In another bowl, whip 1 cup heavy cream with 2 tablespoons confectioners’ sugar until soft peaks form.

Pour into a prepared graham cracker or cookie crumb crust and chill for at least 4 hours before serving. Top with chocolate shavings, peanuts, and whipped cream if desired.

Lemon Bars

Preheat the oven to 350°F. Grease an 8-inch square pan.

In a bowl, whisk 1 cup flour, 2⁄3 cup confectioners’ sugar, and 1⁄4 teaspoon salt. Cut in 1⁄2 cup butter until crumbly.

Press into the bottom of the prepared pan. Bake for 15 minutes, until light golden brown.

In another bowl, whisk 3 eggs, 3⁄4 cup granulated sugar, and the zest and juice from 2 lemons. Pour over the crust.

Bake for 15 to 20 minutes, until the filling is set. Let cool, then dust with confectioners’ sugar and cut into squares. Chill before serving.
