England

Parmo is a popular British dish. It is made with deep-fried, breaded chicken cutlets covered with creamy sauce. These can also be topped with anything from cheese to bacon to pepperoni and garlic sauce. The dish is served with chips and a salad on the side.

Coronation chicken is an Indian-type dish that originated in England. It is prepared with cooked chicken pieces, mayonnaise, tomato paste, curry powder, onions, chicken stock, lemon juice, yogurt, dried apricots, and oil. The ingredients except for the chicken are stir-fried and then combined with the chicken pieces. Before serving the dish is refrigerated for at least one hour.

Chicken tikka masala is a dish influenced by Indian cuisine. It is a combination of marinated tandoor-cooked chicken pieces in a spiced tomato-cream sauce.

France

Magret de canard is a dish made with flash-seared duck breast. The duck meat is thinly sliced and still pink inside. It is usually made with the mulard duck, a cross between the Pekin and Muscovy duck. It has thicker breast meat.

Germany

Hendl means roasted chicken in Austro-Bavarian. A whole chicken is salted and roasted. During roasting the bird is often doused with melted butter. It is accompanied by potato salad or large pretzels.

Czech Republic

Pecena kachna is roasted duck in the Czech Republic. The dusk is seasoned with caraway seeds and marjoram. It is slowly roasted in the oven until golden brown. The dish is served with potatoes, bread dumplings, braised red cabbage, and a thick sauce prepared with duck fat and flour.

Romania

Chieftele are crispy, deep-fried meatballs. They are made with minced chicken or pork, bread crumbs, and mashed potatoes. For flavoring onions, garlic, lovage, and parsley leaves are added.

Spain

Arroz con pollo is a dish that originated when Spain was under Moorish influence. The dish consists of chicken, rice, stock, beer, sofrito, and spices like saffron, cumin, and coriander.

Pollo al ajillo is a dish made with chicken pieces in garlic sauce. The sauce consists of white wine, stock, garlic, and herbs like bay leaves, thyme, and rosemary. It can be eaten as a main meal or as a tapa.

Portugal

Frango assado com piri piri is a dish made with a whole butterflied chicken marinated in olive oil, seasonings, and crushed piri-piri peppers. After the chicken is roasted it is served with a piri-piri sauce made with dry or fresh chili peppers and oil.

Arroz de pato is a traditional dish consisting of flavorful duck meat and rice. A whole duck is cooked in seasoned stock with smoked meat and sausages. Shredded duck meat is placed in a clay pot and topped with rice and cooked in the same broth. Before baking the dish is topped with sliced sausages or pieces of smoked meat.

Gulai ayam is a traditional curry-like dish. The dish is prepared with pieces of chicken simmered is a spicy sauce made with coconut milk and spices like chili, turmeric, coriander, cumin, and nutmeg. It is served with steamed rice on the side.

Nasi goring ayam is a fried rice dish. It is made with chicken thighs, oil, salt, white pepper, shallots, rice, turmeric, soy sauce, fish sauce, galangal or ginger, garlic, scallops, kecap manis, and hot peppers. Once done the dish is topped with fried eggs, fried shallots, and sliced chili peppers.

Bakso goreng are fried meatballs eaten as a snack of Indonesian-Chinese origin. The meatballs are prepared with a combination of chicken, beef, fish, shrimp, and pork. The ground meat is mixed with peppers, garlic, sesame oil, flour, eggs, starch, sugar, and salt. The deep-fried until golden brown and crispy.

Fried duck is an Indonesian delicacy that is crispy on the outside and tender on the inside. The dusk is cut into pieces, boiled or steamed and then deep-fried until crispy. Before the duck meat is coated in spices like garlic, ginger, turmeric, galangal, or coriander.

Betutu is a ceremonial Balinese dish. It has two versions one made with chicken, ayam betutu and the other with duck, bebek betutu. The whole chicken or duck is rubbed and stuffed with spices like turmeric, ginger, pepper, chili, and shrimp paste. The seasoned bird is wrapped in leaves, placed in an earth oven and steamed over hot coals.

Philippines

Inasal na manok is a Filipino grilled chicken dish. It originated in Bacolod and is the signature dish of the Visayas region, The dish is prepared with pieces of chicken marinated with vinegar, and spices like lemongrass, garlic, and ginger. During grilling the meat is brushed with annatto-infused oil giving the chicken a golden color and peppery flavor. The city of Bacolod declared this dish as an important cultural property in 2022.

Galinha a Africana or frango assado is a dish influenced by African and Portuguese cuisine. It is a combination of barbecued chicken and a spicy sauce made with peanuts, coconut milk, paprika, grated coconut, and shallots.

Chongqing chicken is a famous Sichuan dish made with chicken and chilis. The chicken used is on the bone, then chopped into small pieces, marinated, and deep-fried. The dish has more dried red chili peppers than chicken. The combination of ingredients are stir-fried with ginger and garlic. The chicken is eaten with chopsticks picking out the pieces while leaving the remaining chili peppers in the bowl.

Soy sauce chicken is a traditional dish originating in northern China. This dish is a classic example of red-cooking technique with the chicken simmered in a soy-based liquid along with seasonings.

Crispy fried chicken is a traditional Cantonese dish. The chicken is first steamed and dried, then deep-fried in a way that the skin stays crunchy and the meat is tender. The chicken is steamed with spices like cinnamon, Sichuan pepper, ginger, anise, and nutmeg. Then the chicken is drizzled with a combination of vinegar and sugar.

Peking duck has a history dating back to the Yuan Dynasty of the 13th century. The duck is cooked until the skin becomes golden and crispy leaving the meat tender and moist. The duck meat and the skin are folded into thin pancakes or steamed white buns.

Japan

Bonjiri is a type of yakitori, a category of Japanese skewered chicken dishes that belong to the larger group of kushiyaki, any grilled or skewered type of food. This yakitori variety is made with chicken tails, seasoned with salt or a special yakitori sauce called tare, made with soy sauce, mirin, sake, and sugar. The chicken tails are skewered on bamboo sticks called tepogushi then grilled.

Tebasaki is a traditional yakitori dish prepared with chicken wings. The wings are place on skewers, then grilled. They’re seasoned with salt and pepper and typically come butterflied in pairs on a skewer,

Tsukune is a yakitori version made with ground chicken. The chicken meat is seasoned and formed into oblong patties or small meatballs skewered on bamboo sticks. The skewers are seasoned with salt or tare a combination of soy sauce, sake, and mirin. The ground chicken includes sliced scallions, garlic, ginger, and onions.

Iran

Morgh e shekam por is a traditional Iranian stuffed chicken dish. It is prepared with young chicken varieties, cleaned, and marinated in oil, juice (usually apple, lemon, or lime) and spices like saffron and turmeric. The stuffing is a combination of dried fruit like prunes, dates, raisins, barberries or apricots. The fruit is chopped and mixed with onions, garlic, and herbs like parsley, chives, cilantro, and tarragon.

Jujeh kabab is a grilled chicken kebab. The chicken is cut into large chunks, marinated, skewered, then grilled.

Thailand

Khao mok gai translates into chicken buried in rice. Both the chicken and rice are heavily seasoned with traditional biryani spice like curry powder, coriander, cardamom, turmeric, cumin, and cinnamon. The dish is served with fresh tomatoes or cucumbers on the side and nam jim dipping sauce with fresh mint and ginger.

Taiwanese Popcorn Chicken is a dish that consists of bite-sized chicken pieces marinated in soy sauce, garlic, ginger, rice wine, and various spices. The chicken pieces are coated in corn or potato starch and deep-fried until crispy. The dish is usually prepared with boneless chicken thighs and seasonings like salt, pepper, and five-spice variations that include seaweed powder, mustard powder, or all spice.

India

Chicken 65 is a poultry dish originating in Chennai. The dish consists of deep-fried chicken that has been marinated in ginger, lemon, red chilies, and other spices.

Tandoori chicken is a popular dish. It is a combination of chicken marinated in yogurt and seasonings like tandoori masala, nutmeg, and cumin. The placed on skewers it is cooked at high temperatures in cylindrical clay ovens called tandoor.

Pakistan

Chicken karahi is a poultry dish popular in Pakistan and North India. Karahi refers to a thick, deep-cooking pot similar to a wok. The dish is made with chicken, tomatoes, garlic, ginger, red chili powder, cumin, garam masala, all spice, and cardamom.

Vietnam

Ca ri ga is the Vietnamese version of Indian chicken curry. The dish is prepared with chicken pieces, potatoes, carrots, onions, garlic, coconut milk, chicken broth, and seasonings like lemongrass, fish sauce, bay leaves, and curry powder. First the chicken is marinated over night and then simmered with all the ingredients until tender.

South Korea

Andong jjimdak is a dish that is made with braised chicken doused in a sweet and spicy sauce infused with honey and soy sauce. Other ingredients include cellophane noodles, garlic, onions, chili peppers, shiitake mushrooms, potatoes, and other vegetables.

Dakbokkeumtang is a dish that is prepared with chicken pieces, potatoes, onions, and carrots stir-fried with soy sauce, gochujang (fermented sauce), and garlic.

Dak galbi is a stir-fried dish that is cooked at tableside on large cast iron skillets. It includes various chicken pieces, cabbage, tteok rice cakes, carrots, chili peppers, and sweet potatoes. A spicy sauce is added made with spicy chili paste, chili flakes, soy sauce, garlic, ginger, and onions.

North America

The US

Chicken a la king is a dish prepared with diced chicken meat, cream sauce, vegetables, and sherry mushrooms. It is served over rice, noodles, or buttered toast.

Turducken is an American-Canadian dish. It is made with deboned turkey, deboned duck, and deboned chicken. All of the birds are rolled into one and stuffed with three kinds of stuffing layered between the meats.

Chicken fingers originated in the US. White poultry meat is cut into strips, coated in breadcrumbs, and deep-fried in hot oil. They’re served as an appetizer or snack with various dips like ketchup, mayonnaise, honey mustard, or barbecue sauce.

Chicken and dumplings is a dish made with water-cooked chicken and dumplings made with flour, shortening, and liquid. Once the chicken is cooked the dumplings are added to the leftover chicken broth and served with the chicken.

General Tso’s chicken is a Chinese-American sweet and spice dish. It consists of dices chicken pieces deep-fried and added to a stir-fry with ginger, garlic, scallions, and hot chili peppers. A sauce is made with sugar, soy sauce, rice vinegar, and rice wine.

Mexico

Pollo asado is a dish that is made with marinated grilled chicken seasoned with citrus juices and cumin. The grilled chicken is served with warm tortillas.

Mexican enmoladas are enchiladas covered with mole sauce. The tortillas are fried, dipped into warm mole sauce and filled with chicken and cheese.
