Beguni

Some of the most popular dishes in Bangladesh include biryani, hilsa curry, and pitha. These dishes reflect the rich culinary heritage of the country, characterized by a blend of spices and flavors that are unique to Bangladeshi cuisine.

A simple kind of dish beguni consists of deep-fried eggplant slices. The batter is made of rice and gram flour and spices such as turmeric, chili powder, and cumin. After the eggplant is sliced, the slices are dipped in the batter and deep-fried. Usually served with a yogurt-based sauce and enjoyed as a snack.

Biryani is a spicy rice dish that is prepared with meat or fish, rice, potatoes, and spices. Meat usually consists of mutton, goat, chicken, or beef. The meat is marinated and layered with rice, potatoes, and spices.

Chingri malai curry is among the most popular Bangladesh curry dishes that are based on coconut milk. The dish is a creamy seafood curry prepared with prawns or shrimp in a mild coconut sauce with aromatic spices and served with basmati rice.

Chotpoti is a popular street food that is prepared with a mixture of spicy, zesty ingredients. The ingredients include boiled potatoes, boiled eggs, chickpeas, chopped onions, green chilis, and spices mixed with tamarind sauce, chili sauce, and mustard oil. The dish is often garnished with chopped coriander, crushed, crispy fried puris, and sometimes boiled lentils or chopped cucumbers.

Dhaka Kacchi Biryani consists of rice and marinated beef that has been cooked in spices like nutmeg, mace, pepper, cloves, cardamom, cinnamon, bay leaves, coriander, mint, ginger, onion, tomatoes, green chilies, and garlic. It is sometimes served with a boiled egg and salad.

Keema is a stew that is prepared like a curry. It is a combination of minced lamb or chicken, green peas, ginger-garlic paste, chili, onions, ghee, and garam masala spices. It is commonly served as a main dish accompanied by flatbreads.

Morog Polao is a traditional dish that is a combination of fragrant rice cooked with chicken and aromatic spices. The chicken pieces are marinated in yogurt, ginger-garlic paste, and a mix of cumin, coriander, turmeric, and chili powder. Then the marinated chicken is grilled with onions. Parboiled rice is added to the chicken along with water or chicken broth and simmered until the rice is cooked.

A popular Indian dish, murgh tikka, is prepared with marinated chicken pieces that are grilled or roasted. The boneless chicken is first marinated in a mix of yogurt, spices, lemon juice, and mustard oil and then cooked on skewers. The common spices used are turmeric, cumin, coriander, garam masala, red chili powder, and paprika. Traditionally it is cooked in a tandoori oven.

Mutta rezala is a rich and creamy mutton or goat meat curry. Tender mutton pieces are cooked in a sauce that consists of cream, yogurt, nuts, and spices like cardamon, cloves, and cinnamon.

Shami kebab is a variety of kebab that consists of combining minced lamb, mutton, beef, or chicken with split Bengal gram, onions, chilis, ginger, garlic, and a variety of herbs and spices such as cumin, red chili flakes, garam masala, and mint leaves. The meat mixture is seasoned with salt and pepper and shaped into round patties, then coated in beaten eggs and pan-fried. They pair well with onions, lime or lemon wedges, roti or naan, and various chutneys.

A traditional dish called shorshe ilish makes use of the ilish fish as the main ingredient. Slice ilish is slowly simmered in a thick broth that is a combination of ground mustard seeds and green chili peppers in addition to mustard oil and spices like turmeric, cumin, and red chili powder. It is served with rice on the side.
