Gnocchi is a type of Italian dumpling made from flour, potatoes, eggs, and sometimes cheese. It is typically served as a substitute for pasta and can be served with a variety of sauces, such as marinara, pesto, or alfredo. The dough is traditionally made by mixing boiled and mashed potatoes, flour, and eggs together, and then shaping the mixture into small dumplings. The dumplings can then be boiled, baked, or sautéed.

There are many different variations of gnocchi, depending on the region of Italy where it is made. For example, in the region of Lombardy, gnocchi is typically made with semolina flour and eggs, while in the region of Emilia-Romagna, it is made with flour and ricotta cheese. In addition to traditional potato gnocchi, there are also variations made with other ingredients such as spinach, pumpkin, or sweet potato.

Gnocchi has a long history in Italian cuisine, dating back to the Roman Empire. The word "gnocchi" comes from the Italian word "nocchio," which means "knot" or "knob," referring to the small, rounded shape of the dumplings.

The traditional method of making gnocchi is by hand, which can be time-consuming. However, there are also gnocchi boards and gnocchi rollers available that can be used to create the traditional ridged shape of gnocchi. Additionally, pre-made, frozen gnocchi can be found in many grocery stores.

Gnocchi can be enjoyed as a main dish or as a side dish. They are a versatile food and can be paired with a wide variety of sauces and ingredients, including meat, vegetables, and cheese. Some popular gnocchi dishes include gnocchi alla sorrentina, which is made with marinara sauce and mozzarella cheese, and gnocchi al pesto, which is made with basil pesto sauce.
