So, continuing with our previous article, here we have another amazing recipe from Meta Givens from the 40’s. I thought Bacon Muffins just sound like an amazing idea. This is another one I would love to try! I am not the biggest baker, but this is something I would certainly get those muffin pans out to make!

Did you know this existed? I am excited for this. The name says it all, so let’s get these awesome things in the oven because you didn’t know it, but you needed bacon muffins. I needed bacon muffins. Everyone needs Bacon Muffins.

You will need:

2 slices of Bacon

2 cups of all-purpose flour

½ tablespoon of salt (or until the ancestors tell you to stop, who is going to judge)

2 ¼ teaspoon of baking powder

2 tablespoons of sugar

1 egg beaten

1 cup of milk (or 1/3 cup of evaporated milk and 2/3 cup of water)

2 tablespoons of bacon drippings (or butter/oil if you don’t want to be that fat)

The first thing you want to do is chop your bacon up as fine as you would like it and cook it down, crisp it up as much as possible. Take your delicious bacon out of the skillet, and let it sit on the side for a second so it can cool off. Take a piece if you want because, you deserve it. Sift your flour into a bowl, (sifting is when you take your flour and run it through a metal strainer just in case you did not know this.) Measure it again and resift it two more times with your salt, baking powder, and sugar (or you can add some other seasonings if you would prefer to.) Then, add the crisped bacon to your flour mixture. Stir that up and make sure it is blended nicely.

Now we are going to add our wet ingredients.

The you are going to take your beaten egg and your bacon fat (or you can try some softened butter if you like, but as for me, bacon grease. Let’s be honest, if we are making bacon muffins, are we really concerned with health at this point? No.) and your milk and combine in a separate bowl. Add these wet ingredients into your dry ingredients all at once and stir quickly until they are just dampened, then stir it 3 or 4 more times but not too much. According to the original recipe, you do not want to mix this up too much.

Don’t upset that balance.

Do NOT STIR until smooth.

After this step is complete, spoon it into a greased muffin pan, and you will want to fill them about two-thirds of the way do not completely fill them. You need to leave some space for your muffins to rise. Now it is time to bake the muffins in the oven which should be set to 425 degrees. You should bake them for approximately 20 minutes, or until your muffins are nicely browned. Serve with butter, because of course you should serve them with something. I honestly would see myself doing this similar to a southern biscuits and gravy. I would most likey them half way and pour some sausage gravy on that and call it a night. It will make about 12 medium sized muffins. Life is too short to not try new things!
