So, you have been hearing a lot of talk about Plant Based eating and you would like to give it a try but you are unsure of how the kids might take it?? Don't worry, it's not as hard as you think. Remember, you do not have to make every meal plant based. Start out by adding a few a week. Here are some snacks to get you started.

Who doesn't love a bright and colorful bowl of fruit? This fruit salad will make your kids sing!

Classic Fruit Salad

Fun Fruit Salad

Ingredients:

1 Cup Grapes (halved)

2 Nectarines (pitted and cubed)

1 Apple (cored and cubed)

2 Cup Strawberries (cut into quarters

1 1/2 Cups Blueberries

1 tbsp Honey

Directions:

Wash and dry all fruit.

Slice and combine fruit in a large bowl (with a lid)

Add honey, toss and serve.

Cover a refrigerate left overs for later.

Peanut Butter Banana Bites

Chocolate Oatmeal Bites

Ingredients:

1/4 cup peanut butter no sugar or oil added

12 dates pitted

1/2 cup warm water

2 bananas ripe

2 cups rolled oats

1 tsp baking powder

1/4 cup cacao powder

1 tsp vanilla extract

1/4 cup cacao nibs or dairy-free dark chocolate chips

Directions:

Preheat your oven to 350 degrees F.

Add dates and water to a food processor. Let soak for 30 minutes.

In a large mixing bowl, mash bananas with a fork. Add all remaining ingredients.

Process dates until smooth, stopping to scrape down sides as needed. Add to mixing bowl and mix until combined.

Using an ice cream scoop, scoop out balls, roll and place on baking sheet lined with parchment paper.

Bake for 8 minutes.

Garlic Kale Chips

Garlic Kale Chips

Ingredients:

1 medium-sized bunch of kale washed and dried very well

2 tsp olive oil

a pinch or two of salt

a pinch of garlic powder

Directions:

Preheat your oven to 300 degrees Fahrenheit.

Wash and dry one bunch of kale, making sure the leaves are completely dry. (If there's any moisture left on the leaves you'll end up with soggy kale chips.)

Tare the leaves off the stems and away from the tough, woody veins of the kale and into chip-sized pieces.

Dump the pieces of kale on an unlined baking sheet.

Drizzle the olive oil as evenly over the kale as possible. Gently massage the oil into the kale leaves, with your hands. Making sure to massage the oil onto the entire surface of each of the kale leaves. If you find you need a tiny bit more oil, add it one drop at a time.

Sprinkle a pinch or two of sea salt and a pinch of garlic powder over the kale, making sure it is spread evenly and put in preheated oven.

Bake for 10 minutes. Flip and bake for another 10-15 minutes, watching the pan closely for the last 5-7 minutes to prevent burning.

Remove from the oven and leave the kale chips on the pan for 3-5 minutes before serving.

Your kids will love these. I didn't think they would and they were gone in minutes. A great thing about kale chips is you can add any spices you want, chili, turmaric, traditional yeast, anything you like.

No Bake Brownie Balls

Ingredients:

(makes around 20 Brownie Balls)

1 1/2 cup runny peanut butter/nut butter of choice

1/2 cup maple syrup or honey (to taste)

6 tbsp cocoa powder

6 tbsp coconut flour

4 tbsp vegan/dark chocolate chips

Directions:

Combine nut butter and maple syrup in a bowl. Mix well

Add in the cocoa powder and coconut flour and mix again.

Fold in the dark chocolate chips. If the mixture is too sticky to touch, cover and place in the fridge for 5-10 minutes to harden up!

Scoop out tablespoons of the mixture and roll into balls with your hands. Leave in the fridge for about half an hour to set.

You can store them in an airtight container for up to 2 weeks. Enjoy! If you pop them in the microwave for 15-20 seconds, they will turn into a yummy, fudgey, melty, chocolatey snack!

Baked Apple Cinnamon Slices

Baked Apple Slices

Ingredients:

3-4 Medium sized apples, washed and dried

(pick one that is naturally sweet because we are skipping sugar)

Instructions:

Preheat oven to 200ºF.

Thinly slice the apples, removing any seeds.

Sprinkle with cinnamon.

Bake for 1 hour. Flip the apples, Bake for another hour.

Let apple chips cool, and eat!

Bake for 12 minutes, or until firm. Best enjoyed warm.

As you can see, there are no strange ingredients just the basics. All healthy and fresh. Nothing will make you and your kids happier than healthy snacks.
