Recipe 1:

Spicy and Cheesy Ground Beef Skillet

Recipe Yield: serves four people.

Ingredients:

- 1 pound ground beef, two cloves garlic (minced), half a yellow onion (diced), five tablespoons of ketchup, three tablespoon of hot sauce or taco seasoning mix, shredded cheese to taste.

Instructions :

In a large skillet, cook the ground beef and garlic until browned. Drain excess fat from the pan (if any). Add diced onion to the mixture and cook for about five minutes or until soft.

Return cooked beef back into the skillet with onions, add ketchup and hot sauce/taco seasoning mix then stir well. Let simmer on low heat for about ten minutes. Top with cheese and serve immediately.

Recipe Notes:

You can use any variety of shredded cheese you like, such as cheddar, pepper jack, or mozzarella.

If you want a milder sauce, omit the hot sauce altogether or just add one tablespoon instead of three.

Recipe two:

Beef and Broccoli

Ingredients:

-1 pound ground beef, one cup of uncooked white rice, two cups of chicken broth or stock, one head of broccoli (chopped into small florets), soy sauce to taste.

Instructions:

In a large pot or Dutch oven over medium-high heat, brown the ground beef. Drain the excess fat from the pan (if any). Add chicken broth, soy sauce and rice to the beef mixture then bring to a boil. Cover with lid and reduce heat down to medium-low. Simmer for about 20 minutes or until all of the liquid has been absorbed by the rice, stirring occasionally so that it doesn't stick on the bottom of the pot. Stir in broccoli and let cook for an additional five minutes or until tender. Serve immediately.

Recipe Notes:

You can use any type of ground meat you want, such as turkey, pork, lamb, etc. If you don't have chicken broth on hand, feel free to substitute it with water or even vegetable broth.

Recipe three:

One-Pot Hamburger

Ingredients: -

One pound ground beef, one onion (diced), one green bell pepper (diced), two cups of uncooked elbow macaroni, one and a half cups of chicken broth or stock, one can (ten ounces) diced tomatoes with green chilies, one and a half cups of milk, two tablespoons of all-purpose flour, one teaspoon salt, one teaspoon chili powder.

Instructions:

In a large pot or Dutch oven over medium heat, cook the ground beef and onions until browned. Drain the excess fat from the pan (if any). Add bell pepper to the mixture and cook for about five minutes or until soft.

Stir in uncooked macaroni and cook for a couple of minutes, stirring occasionally.

Add chicken broth, milk and flour to the beef mixture then stir together well so no clumps form from the flour. Let simmer on medium-low heat for about ten minutes or until most of the liquid has been absorbed by pasta (if there is too much liquid remaining, cook uncovered for a few minutes longer to reduce it).

Stir in tomatoes with green chilies and chili powder then simmer on low heat for about ten more minutes. Season the mixture with salt according to your preference (we used one teaspoon) then serve immediately.

Recipe Notes:

You can use any type of ground meat you want, such as ground turkey, pork or lamb. If you don't have chicken broth on hand, feel free to substitute it with water or even vegetable broth.

Recipe four:

Italian Sausage and Veggie Skillet

Ingredients:

-One pound Italian sausage (mild or hot), one onion (diced), two bell peppers (any color), two zucchini squash (sliced into half-moons and quartered), one can (14.75 ounces) diced tomatoes with Italian herbs, three tablespoons of tomato paste, garlic salt to taste.

Instructions:

In a large skillet over medium heat, cook the sausage until browned then remove from pan and set aside. Add diced onion and bell peppers to the skillet then sauté until soft.

Stir in zucchini squash, diced tomatoes with Italian herbs, tomato paste and garlic salt then let simmer on low heat for about ten minutes or until vegetables are tender. Stir in cooked sausage and serve immediately.

Recipe Notes:

You can use any type of Italian sausage you want, such as sweet or hot. If you don't have diced tomatoes with Italian herbs on hand, feel free to substitute them with regular diced tomatoes or tomato sauce.

Recipe five:

Swiss Steak

Ingredients:

-One and a half pounds flank steak (or round steak), one and a half cups all-purpose flour, one teaspoon garlic powder, one teaspoon onion powder, one teaspoon paprika, one cup beef broth (or chicken broth), two tablespoons olive oil.

Instructions:

In a shallow dish or pie plate, mix together the flour, garlic powder, onion powder, and paprika then set aside.

In a separate bowl, mix the beef broth and olive oil together then set aside.

Heat a large skillet over medium-high heat and add one tablespoon of oil to the pan once hot. Slice steak into four pieces (or five if using round steak) against the grain then dredges in flour mixture until evenly coated on both sides.

Place steak in skillet and cook for about two minutes per side or until browned.

Add the remaining tablespoon of oil to the pan then add onions and peppers.

Cook vegetables until soft then pour in beef broth mixture. Bring to a boil then reduce heat and let simmer for about thirty minutes or until steak is cooked through. Serve immediately with rice, potatoes, or noodles.

Recipe Notes:

If you don't have flank steak or round steak on hand, feel free to use a different type of beef such as chuck roast, ribeye, or sirloin.

If the skillet isn't big enough to fit all of the steaks at once, cook it in batches. You can also omit the onions and peppers in order to make a gravy.
