Ingredients:

500 grams mutton, cleaned and cut into pieces

1/2 teaspoon turmeric powder

1 tablespoon coriander powder

Instructions:

Heat oil in a pressure cooker or a heavy-bottomed pan.

Add fennel seeds and let them splutter.

Add onions and sauté until they turn translucent.

Add ginger-garlic paste and sauté for a minute.

Add tomatoes and green chilies and sauté until they turn mushy.

Add all the dry spices - red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Mix well and sauté for a minute.

Add the mutton pieces and mix well with the masala.

Add enough water to cover the mutton pieces and pressure cook for 5-6 whistles or until the mutton is cooked well.

If using a heavy-bottomed pan, cover and cook on medium-low heat until the mutton is cooked well.

Once the mutton is cooked, add curry leaves and let it simmer for a few minutes.

Garnish with coriander leaves and serve hot with steamed rice or roti.

1 lb mutton rib bones

Once the pressure is released, open the lid and check if the mutton rib bones are cooked well. If not, cook for a few more minutes.
