Have you ever tried a corned beef fritter?

I know it’s quite a very strange request.

If you’ve never had a corned beef fritter.

You should because they really are the best.

Mom would make corned beef on a Saturday.

A giant slab of pinkish-colored meat.

She sliced it up to eat for dinner on Saturday,

But there was always way too much to eat.

At Sunday lunch we got corned beef sandwiches

Tomato and cheese completed that daytime meal.

We ate our Sunday corned beef sandwiches,

Because tomorrow would be a big deal.

The kitchen became a place to create magic,

Mom took those leftover slices of pink beef.

But the ingredient needed to create the magic,

Was the batter, and for that Mom was the chief.

She fried them up in her favorite frypan,

Flipping them to make sure none would burn.

The smell that came from Mom’s favorite frypan,

Was enough to make the hardest vegan turn.

She placed the stack, in the middle of the table,

Dad took his first, then everyone else got their share.

It was a blur of hands flying across the table,

Then the sound of chewing echoed through the air.

I’ve tried for years to recreate Mom’s corned beef fritters

I’ve had no success, and neither has my wife.

Maybe you can’t recreate Mom’s corned beef fritters,

Because you can’t go back to that time of your life.
