Broccoli and Cheddar Soup

Ingredients:

2 cups broccoli florets

1 tablespoon butter

1 small onion, diced

2 cloves garlic, minced

3 cups vegetable or chicken broth

1 cup milk

1 cup shredded cheddar cheese

Salt and pepper to taste

Instructions:

In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and cook until the onion becomes translucent.

Add the broccoli florets to the pot and stir for a few minutes.

Pour in the vegetable or chicken broth, bring it to a boil, and then reduce the heat to a simmer. Let the soup simmer until the broccoli is tender.

Using an immersion blender or regular blender, puree the soup until smooth. If using a regular blender, be sure to blend in batches and exercise caution when blending hot liquids.

Return the pureed soup to the pot and stir in the milk.

Gradually add the shredded cheddar cheese while stirring continuously until it melts and incorporates into the soup.

Season with salt and pepper to taste.

Allow the soup to simmer for a few more minutes to heat through.

Serve the creamy broccoli and cheese soup hot. Optionally, garnish with additional shredded cheese or croutons.
