Oh Miss Lucy, how will I survive

back in the states on burgers and fries?

After conch fritters, chocolate peanut pie,

pepperpot casserole bathed in curry and thyme.

Tamarind sauce over plump pigeon peas,

chicken Colombo under mango chutney.

Plantain pinwheels, fried yam cakes,

banana beignets eaten in haste.

I’ll dream all day of spiced carrot sticks,

chilled ginger beer and malanga chips.

After Miss Lucy’s, food will hold no surprise

Oh Miss Lucy, my taste buds will die!
