Recipe for burnt sugar cream with berries

Ingredients

  • 150 g white chocolate, broken into small pieces
  • 200 ml low-fat sour cream
  • 200 ml whole milk
  • 1 teaspoon of vanilla essence
  • 2 whole eggs, plus 2 more yolks
  • 1 tablespoon of malai, mixed with 2 tablespoons of milk
  • 300 g berries (raspberries, blackberries, blueberries)
  • 3 tablespoons of caster sugar

Method of preparation

  1. Heat the oven to 160 degrees Celsius.
  2. Melt the white chocolate with 75 ml of cream in a bowl in a bain-marie.
  3. In another bowl, heat the remaining cream, milk and vanilla essence until it boils, then take it off the heat.
  4. Beat together the eggs, the yolks and the milk-soaked milk, then pour the mixture into the bowl with the vanilla cream. Put on a low heat and heat gently, stirring until the composition has thickened a little and covers the back of a spoon. Pour the mixture into the chocolate cream, beating.
  5. Sprinkle the berries in a heat-resistant baking dish, about 1.5 l, then pour the mixture over the fruits, passing it through a sieve. Place the dish in a baking tray, pour hot water into the tray to cover 2/3 of the height of the dish.
  6. Bake for 20-25 minutes, until it hardens slightly. Remove the dish from the pan with water, let it cool for about an hour, then keep it in the refrigerator for about 6 hours.
  7. Sprinkle with powdered sugar, then place on the grill for a few minutes or flambé until the sugar caramelizes.

Recipe for Sponge cake dessert with berries

The simple cake with berries is a simple sponge cake with berries, delicious and easy to prepare, with ingredients easily found in the supermarket, so that all we have to do is treat ourselves to something sweet.

I like simple fruit cakes. Especially those in which I have combinations of sweet-sour tastes. You don't need baking powder for this cake. The egg whites whipped to a stiff foam ensure the final texture of this dessert.

I prepare the simple cake with berries both in summer and in winter, with fruits that I find in the supermarket, but also the fruits I freeze.

Frozen fruits need to be very well drained after defrosting, then they must be rolled in flour or starch so that the water that will come out of the fruits during baking does not leave raw dough around the fruits.

Ingredients

  • 4 medium eggs
  • 100 grams of caster sugar
  • 120 grams of white wheat flour
  • 3 tablespoons of oil
  • a pinch of salt
  • 1 teaspoon of vanilla essence
  • 200-250 grams of berries (I used blackberries)

Method of preparation

  1. Turn on the oven at 180 degrees and prepare a square cake pan of cm, putting baking paper in it all around.
  2. Break the eggs and put them in the bowl of the mixer.
  3. Mix for a minute, then add the sugar, salt and vanilla essence.
  4. We continue mixing for 10-15 minutes until the composition becomes whitish and triples in volume.
  5. Finally, add the oil and mix briefly, then set aside and gradually add the sifted flour.
  6. We incorporate it with the help of a whisk or a silicone palette, with light movements, from bottom to top.
  7. After we have incorporated all the flour, we pour the composition into the pan prepared in advance.
  8. Place the blackberries (forest fruits) from place to place and then put the tray in the hot oven for about 20 minutes (depending on how it bakes).
  9. We do the toothpick test and, if it comes out dry, we take the tray out of the oven, let it cool a little and then remove the top from the tray, detach the paper and leave it to cool on a grill.
  10. After it has cooled down, cut into medium-sized cubes and, if desired, dust with powdered sugar.
