Even though autumn is over, the Halloween pumpkin has other uses. Here is a lovely dessert.

Recipe for Pumpkin check

A very successful recipe with pumpkin, and not semi-prepared mashed, but used raw immediately in the dough. The check is very tender, colorful, aromatic, they also make wonderful muffins, Sofia appreciated them more than the check.

Initially, the recipe is with olive oil, I felt its aroma and it seemed to me that it was stronger than the pumpkin one. I already made the check you see here with butter and it was exactly what I needed. Of course, you can use any odorless oil instead of butter, it comes out just as tender and good.

By the way, these quantities make a very large check (if you have a large check tray), or a medium check and a muffin tray, or a medium check and a small one.

Ingredients

  • 250 g baked pumpkin puree
  • 240 g flour
  • 150 g of sugar
  • 1 medium egg
  • 65 g of melted butter
  • 100 ml of milk
  • 1 packet of vanilla sugar
  • 6 g of baking powder
  • 15 g corn flakes
  • 1 pinch of salt

Method of preparation

  1. Cut the pumpkin into slices and put it in an oven tray lined with baking paper. We bake it in the oven preheated to 200°C and leave it until it softens perfectly. We take it out of the oven and after it cools down a bit, we extract the flesh with a spoon and mash it until we get a fine puree.
  2. We put the egg, sugar and vanilla sugar in a bowl and mix with a spoon for about 2-3 minutes, until we get a homogeneous mixture.
  3. Add the melted and cooled butter, the cold pumpkin puree and a pinch of salt and mix until smooth.
  4. We sift the flour mixed with the baking powder, add it to the dough in 3 tranches and mix.
  5. Add the milk and mix, then add crushed corn flakes (if you don't have them at home, you can exclude them). The final consistency of the pumpkin cake dough is denser, and I think this is due to the type of pumpkin I used, namely the Mantua pumpkin.
  6. We put the dough in the form coated with butter and flour, carefully level the surface and bake it in the preheated oven at 170°C for 30-40 minutes.
  7. Before taking it out of the oven, prick it with a toothpick. If it comes out clean, the cake is ready, if it comes out a little wet, bake it for another 5 minutes.
  8. We serve it when it cools down a bit.

Simple fluffy cake, old recipe, classic, economical, old recipe, as I learned it from my mother. It is a cake without baking powder, very fluffy and aromatic, a recipe that succeeds perfectly every time. It can also be made with fresh or dried fruit, fruit compote, as desired.

Ingredients

  • 10 eggs
  • 300 g of sugar
  • 100 g butter or oil (weighed)
  • 250 g flour
  • 25 g of black cocoa
  • 100 ml of milk
  • salt
  • -flavors: vanilla, rum, orange...

Method of preparation

  1. Add three fingers of salt to the egg yolks and beat them a little, then leave them aside.
  2. Beat the egg whites. When the egg whites are well beaten, add the sugar, then let it beat until the sugar dissolves completely and we get a hard and glossy foam.
  3. On top of the yolks, add a spoonful of grated orange peel, a spoonful of vanilla paste, you can also use vanilla sugar, mix very well.
  4. On top of the yolk, add melted butter or oil, little by little, while mixing, just like with mayonnaise. Then add the milk.
  5. Add the yolk mixture, milk and butter over the beaten egg whites, mix everything using a spatula, with light movements, from bottom to top.
  6. We divide the composition, leaving 2/3 white, 1/3 we will color it with cocoa. For the white composition we use 180 g of flour, for the composition in which we put cocoa we will use the remaining 70 g of flour plus cocoa. We sift cocoa and flour, then mix gently, from bottom to top.
  7. From these quantities, you can make a large check, in a baking tray, or you can make 2 smaller ones, as you prefer. Line the tray with baking paper, add a layer of the white composition, then one with cocoa, then alternate, to obtain a zebra effect. You can see in the video recipe how I do everything.
  8. We put the trays in the oven at a temperature of 190-200 degrees Celsius, the oven is preheated. Baking takes around 40 minutes, to check if they are cooked, press a little on top with your hand, you will know if they are cooked. If not, you can insert a toothpick and see if it is dry or not.
  9. We take them out of the pan, let them cool on a grill and dust them with vanilla sugar.
