Ingredients:

1.5 lbs (700g) beef stew meat, cut into bite-sized pieces

2 large onions, finely chopped

2 cloves garlic, minced

2 tablespoons vegetable oil

2 tablespoons sweet paprika

1 teaspoon caraway seeds

1 teaspoon ground cumin

1 bell pepper, diced

2 tomatoes, chopped

2 tablespoons tomato paste

4 cups beef broth

1 cup water

2 bay leaves

Salt and pepper to taste

1 cup potatoes, peeled and diced

1 cup carrots, peeled and sliced

1/2 cup celery, chopped

1/2 cup red wine (optional)

Chopped fresh parsley for garnish

Sour cream for serving (optional)

Instructions:

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions and cook until they become translucent.

Add the minced garlic and sauté for another minute until fragrant.

Add the beef stew meat to the pot and brown it on all sides. Season with salt and pepper.

Stir in the sweet paprika, caraway seeds, and ground cumin. Cook for an additional 2 minutes to enhance the flavors.

Add the diced bell pepper, chopped tomatoes, and tomato paste. Mix well.

Pour in the beef broth and water. Add the bay leaves. If using red wine, add it at this point. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1 to 1.5 hours, or until the meat is tender.

Add the diced potatoes, sliced carrots, and chopped celery to the pot. Continue simmering until the vegetables are tender, about 20-30 minutes.

Adjust the seasoning with salt and pepper to taste.

Remove the bay leaves before serving.

Ladle the Goulash soup into bowls and garnish with chopped fresh parsley. Serve with a dollop of sour cream if desired.
