(IV)Fajitas

Ingredients:

- 1 pound sirloin steak, sliced thinly against the grain

- 3 bell peppers, sliced into strips

- 1 onion, sliced into strips

- 2 tablespoons vegetable oil, divided

- 2 teaspoons chili powder

- 1 teaspoon smoked paprika

- 1/2 teaspoon cumin

- 1/2 teaspoon garlic powder

- 1/4 teaspoon salt

- 1/4 teaspoon black pepper

- Juice of 1 lime

- 8-10 tortillas

- Optional toppings: shredded cheese, salsa, sour cream, guacamole, cilantro

Instructions:

1. In a small bowl, combine chili powder, smoked paprika, cumin, garlic powder, salt, black pepper, and lime juice to make a marinade.

2. Add the sliced sirloin steak to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

3. Heat a large skillet over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat the skillet.

4. Add the sliced peppers and onions to the skillet, and cook, stirring occasionally, until they are softened and lightly charred, about 8-10 minutes. Remove the peppers and onions from the skillet and set them aside.

5. Add the remaining 1 tablespoon of vegetable oil to the skillet. Once hot, add the marinated sirloin steak to the skillet and cook for about 3-4 minutes per side, or until it is browned and cooked to your desired doneness.

6. Return the peppers and onions to the skillet and toss to combine with the steak.

7. Warm the tortillas in the microwave or on a hot griddle until they are soft and pliable.

8. Serve the steak and pepper mixture in warm tortillas, and top with shredded cheese, salsa, sour cream, guacamole, and cilantro, if desired.

9. Enjoy your delicious homemade fajitas!

(V)Sourdough bread

Ingredients:

- 1 cup sourdough starter

- 1 1/2 cups lukewarm water

- 3 1/2 cups all-purpose flour

- 1 1/2 teaspoons salt

Instructions:

1. In a large mixing bowl, combine the sourdough starter and water. Mix together until well combined.

2. In a separate mixing bowl, stir together the flour and salt.

3. Gradually add the flour mixture to the sourdough mixture, stirring and kneading until the dough becomes smooth and elastic. This should take about 10 minutes of kneading.

4. Cover the bowl with a damp cloth and let the dough rise in a warm place for about 2-3 hours, until it has doubled in size.

5. Once the dough has risen, punch it down and form it into a round or oblong shape.

6. Place the dough on a lightly floured surface and let it rise for another 30 minutes.

7. While the dough is rising, preheat your oven to 450°F.

8. Using a sharp knife or razor blade, make a few slashes on top of the dough to allow it to expand while baking.

9. Bake the bread in the preheated oven for 30-35 minutes, until it is golden brown and sounds hollow when tapped.

10. Allow the bread to cool on a wire rack before slicing and serving.

11. Enjoy your homemade sourdough bread!

(VI)Key lime pie

Ingredients:

- 1 1/2 cups graham cracker crumbs

- 6 tablespoons unsalted butter, melted

- 1/4 cup granulated sugar

- 2 14-ounce cans sweetened condensed milk

- 1 cup key lime juice (freshly squeezed preferred)

- 1 tablespoon key lime zest (optional)

- Whipped cream and lime slices for serving

Instructions:

1. Preheat your oven to 350°F.

2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar, stirring until well mixed.

3. Press the crumb mixture into a 9-inch pie dish, making sure the crust is even throughout.

4. Bake the crust in the preheated oven for 10-12 minutes, then remove it from the oven to cool completely.

5. In a large mixing bowl, whisk together the sweetened condensed milk, egg yolks, key lime juice, and key lime zest (if desired).

6. Once the crust has cooled completely, pour the key lime mixture into the pie dish, spreading it evenly over the crust.

7. Bake the pie for an additional 15-20 minutes, until the filling is set but still slightly jiggly in the center.

8. Remove the pie from the oven and let it cool slightly before chilling it in the refrigerator for at least 2 hours, or until completely set.

9. Once the pie is chilled, top it with whipped cream and lime slices as desired.

10. Serve and enjoy your delicious homemade key lime pie!
