Nasi Lemak is a beloved Malaysian dish known for its fragrant coconut rice, flavorful sambal sauce, and an array of delicious accompaniments. This dish is a harmonious blend of sweet, spicy, and savory flavors, making it a favorite breakfast and comfort food.

**Ingredients: **

1. 2 cups of jasmine rice

2. 1 cup of coconut milk

3. 2 pandan leaves (optional)

4. 1 teaspoon of salt

5. 2 cups of water

6. 4-6 hard-boiled eggs

7. 1 cucumber, sliced

8. 1 cup of fried crispy anchovies

9. 1 cup of roasted peanuts

10. Sambal sauce (see below)

**For the Sambal Sauce: **

1. 10-12 dried red chili peppers (soaked in hot water)

2. 3 cloves of garlic

3. 2 shallots

4. 2 tablespoons of tamarind paste

5. 2 tablespoons of sugar

6. 1 teaspoon of salt

7. 2 tablespoons of vegetable oil

**Instructions: **

**1. Prepare the Rice: **

- Rinse the rice under cold water until the water runs clear.

- In a pot, combine the rice, coconut milk, pandan leaves, salt, and water.

- Cook the rice according to your rice cooker's instructions or simmer it on low heat until the liquid is absorbed, and the rice is fluffy.

**2. Make the Sambal Sauce: **

- Blend the soaked dried chili peppers, garlic, shallots, tamarind paste, sugar, and salt until you have a smooth paste.

- In a pan, heat the vegetable oil and sauté the paste until it becomes fragrant and darkens in color. This should take about 10-15 minutes on low heat. Stir frequently to prevent burning. Set the sambal aside.

**3. Prepare the Accompaniments: **

- Boil the eggs until they are hard-boiled. Peel and halve them.

- Slice the cucumber into thin rounds.

- In a separate pan, fry the anchovies until they are crispy, and the peanuts until they are lightly roasted. Drain them on paper towels.

**4. Assemble Your Nasi Lemak: **

- Serve a portion of coconut rice on a plate.

- Top it with a spoonful of sambal sauce, adjusting the amount according to your spice preference.

- Add a few slices of cucumber, halved hard-boiled eggs, crispy anchovies, and roasted peanuts on the side.

- Optionally, garnish with fresh sprigs of cilantro or mint leaves for added freshness.

- Mix the ingredients together on your plate to combine the flavors.
