3 cloves of garlic, minced

1 cup unsweetened plant-based milk (such as almond milk or oat milk)

1 tablespoon olive oil

Salt and pepper to taste

Fresh herbs (such as thyme or parsley) for garnish (optional)

Instructions

Heat the olive oil in a large pot over medium heat. Add the leeks, onion, and garlic. Sauté for 5-7 minutes until the vegetables are softened and fragrant.

Add the diced potatoes to the pot and stir to combine with the leek mixture.
