2020: AN OPPORTUNITY
While some may remember 2020 for all it has taken away, I will remember 2020 for all it has given me. I am thankful for the opportunities, experiences, and time I have been given to remember who I am. To every glass seen half-empty, there is a glass seen half-full.

I am a pasta lover-- a die hard carb fanatic as I would like to call myself. I have posted the recipe of my favorite vegan lasagna here so you can join me in the carb-thusiasm. This lasagna is made with lentils, red sauce, noodles, vegetables and vegan cheese. When you put it all together it tastes out of this world. What more could you ask for?

I have found it. This is the perfect running playlist for my millennial/gen Z babies. It contains all the pop/rap hits from 2010-the present. It can't get much better than this and I am here to tell you why.
THERE'S BACTERIA IN MY YOGURT?!?
I was in fifth grade when I saw “the film”. My greek yogurt which was supposed to be ready-to-eat had a slimy, ooey-gooey, and unappetizing film on top of it. Immediately, I thought my yogurt had expired! So, like the fifth-grader I was, I threw away the entire container of yogurt without knowing that “the film” I saw was actually a healthy layer of microorganisms. A decade or so later, and I am here to inform you about a type of microorganism that makes your yogurt, Lactobacillus bulgaricus well, yogurt. But before we get into the specifics, let me give you a brief synopsis on the importance of these little fermenting bacteria.
Vegan Pumpkin Pizza with Roasted Tofu
Okay. Y'all. If you haven't tried canned pumpkin as a sauce base for your pizza... you're missing out! I have been making a pumpkin pizza every October since I was in high-school. I discovered it when I ran out of marinara sauce and was cravingggg pizza. I saw that we had a can of pumpkin in the pantry and asked myself "why not"? I mixed the pumpkin with fresh garlic and some olive oil, before spreading it on the crust. GAME CHANGER. Back then, I topped it with chicken, vegetables and arugula. Since I have gone vegan though, I substituted the chicken for Oven Roasted Tofu that I had already meal prepped. That said, I feel that the toppings for this pizza are very versatile and if you don't like an ingredient, easily omit it or replace it!

Londyn Bridges
I may not be a mother, but I think all of us females can agree that childbirth is not an enjoyable experience. Worth it in the end? Maybe. I'm joking. Of course it's worth it in the end. Honestly, it's an amazing phenomenon and I can’t even begin to imagine the sheer pain of forcing an eight-pound.... well you get the point. On the day that I was born, my mom truly thought that was the most pain she would ever experience in her life. That was, unless she became pregnant again, she became physically injured, or she became terrified of her own daughter. Coincidentally, one of her nightmares came true, but that’s a story that we’ll come back to later. First, it’s important to understand the events leading up to the present day.
