AUTHENTIC CARNITAS TACOS
One of my favorite staff meals at the restaurant is always these tacos. Anytime I see a cook walk in the door with 3 bags of corn tortillas hangin’ from their hand, I know what day it is, and I do my little happy dance.

CRISPY ROASTED CAULIFLOWER
I count myself fortunate that I grew up with two good cooks for parents. Not only did they know their way around the kitchen, but I credit them for my love of virtually all foods. I always loved my veggies growing up, unlike most kids my age, and it was hard for me to wrap my head around anyone that didn’t appreciate broccoli. My maternal grandmother was always the greatest cook in the family, and I think her influence trickled down to the rest of us for a love of great family cooking.

This recipe is the very first of many of my now signature creations, and it is still my favorite to this day. I can remember clear as crystal, nearly ten years later, the moment the inspiration hit me. I was flipping through a magazine while sitting in a waiting room, and came across a chicken recipe using Rice Krispies as the breading.
