Upside Down Wonderland
I was first introduced to the world of Upside Down cakes when I was 7 years old. To me, the idea of any sort of upside down dessert was amusing, and reminded my childhood self of all things related to Lewis Carroll's Alice In Wonderland. Like Alice, who had also been 7 years old in the tale, this divine, sweet confection, was something to be found at the Mad Hatter's tea party, or at the Queen of Heart's celebratory buffet.

Herb and Vegetable Baked Chicken
What you'll need: A roasting pan A chicken (I like around 6-8 lb ones) 1 red onion (or the sweet Vidalia kind are delish also) sliced 2 carrots, cut into 1-inch pieces 2 stalks celery, cut into 1-inch pieces 2 cups raw brussel sprouts, cut in half lengthwise 2 sprigs fresh rosemary 2 sprigs fresh thyme 1/2 lemon, sliced into wedges 2-3 cloves (unpeeled garlic) 1 clove garlic, peeled and sliced thin olive oil (3 tbsp + a drizzle) salt and pepper
