Ingredients:

1 pound pasta

1 can diced tomatoes

1 onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 tablespoon olive oil

Salt and pepper to taste

Parmesan cheese for serving

Instructions:

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic and cook until softened, about 5 minutes.

Add canned tomatoes, vegetable broth, and pasta to the pot.

Ingredients:

1 can black beans, drained and rinsed

1/2 cup corn kernels

1/2 red bell pepper, diced

2 cups shredded cheddar cheese

4 large flour tortillas

Instructions:

In a large bowl, mix together black beans, corn kernels, diced red bell pepper, and diced onion.

Season with salt and pepper to taste.

Heat a large skillet over medium-high heat.

Place one tortilla in the skillet and sprinkle with 1/2 cup of shredded cheddar cheese.

Spoon 1/4 of the black bean mixture on top of the cheese.

Top with another 1/2 cup of shredded cheddar cheese and another tortilla.

Cook for 2-3 minutes on each side or until the cheese is melted and the tortilla is crispy.

Repeat with remaining ingredients to make three more quesadillas.

Cut into wedges and serve with salsa and sour cream.
