May is National Salad Month

In the first place, salads are a great start to eating healthy.

Check out my Celebrate National Salad Month for some recipes and tips for creating tasty salads.

In fact, lettuce is the second most popular choice in a vegetable. Betcha didn’t know that! But, do you know what the first is? In case you don’t know, it is potatoes. Check out my Happy National Potato Lover Month post to learn more about this popular vegetable.

At the same time, there are a variety of ingredients you can use to make something colorful and tasty.

May is National Salad Month – Best Salad Recipes to Make

So, if you are looking to make something delicious for lunch, dinner, or in between: I have a few recipes for you to make.

Are you ready to dive in?

Broccoli Salad

Since I love Broccoli, I recently created a great salad.

Ingredients

  • Fresh Broccoli Florets
  • Dried Cranberries or Raisins (if you like)
  • Chopped nuts, pecans, or sunflower seeds
  • Bacon (opt for chicken or turkey bacon) When you substitute this type of bacon, it’s leaner and doesn’t shrink. Also, it is less in calories which is a plus.

Toss all ingredients in a bowl.

Because I’m a fan of making my own dressing from scratch; I recommend mixing light olive oil, fresh lemon zest, 1/2 tablespoon of Dijon mustard, ground pepper, and minced or chopped garlic together.

Blend until the dressing is thick. Pour the dressing over your broccoli salad.

Moreover, you can eat this right away or refrigerate and this will last for several days.

Large Italian Salad

When you are looking for something to serve to your family or for a dinner party; I recommend making a large Italian salad.

Ingredients

  • Romaine Lettuce
  • Small cherry tomatoes
  • Olives (I’m a fan of stuffed olives)
  • Pepperoni
  • Pepperoncini
  • Cheese (optional)
  • Light Olive Oil
  • Vinegar (I recommend a Balsamic glaze or Red Wine Vinegar)
  • Ground black pepper
  • 1 -2 garlic cloves smashed
  • Fresh oregano

Toss all ingredients in a large bowl.

Next, whisk in olive oil, vinegar, spices, and garlic.

Finally, don’t pour the dressing on until you are ready to serve.

All you need to do is fill your spinner with water.

Also, the word salad comes from the Latin word “herba salta” or salted herbs.

Meanwhile, China is the largest producer of spinach in the world.

In 2012, the world’s largest salad was made in Romania and weighed 41,998 pounds.
