Basically, Maldivian food is founded on an assortment of flavours, ingredients and techniques; some of which have been within these pleasing isles whilst others have been crafted from the influences of neighbouring nations such as Sri Lanka and India respectively. Although, it would not be too hard to stumble upon dishes comprising either coconut, fish or rice or even a combination of these as the locals are known to resort to these ingredients with a sense of regularity and affection. Read on below for a host of traditional fare and how to get your hands on some.

Where should you be going to?

For starters, the capital city of Male features an array of restaurants and cosy eateries that serve anything and everything under the sun with specialities that have been discovered and passed down through generations. Thus, whilst in the midst of touring Male be sure to check out the local markets where the freshest produce too can be bought. Most of these are what eventually ends being the core of celebrated fare in this part of the world. However, as islands are the major draw here, finding and enjoying the true tastes of tradition will be a pleasing endeavour that one would arguably, resort to throughout the day.

Begin with breakfast

What better way to commence your time in the Maldives than by settling down to an aromatic and flavourful start? The coconut and tuna mixture found in locals' favourite breakfast referred to as Mashuni must be delighted in. With additions such as lemon juice, coconut pulp, onions and salt enhancing the dish as a whole; travellers like you will not be disappointed no sooner one starts tucking into these flavours that are often accompanied with Roshi bread. On the odd occasion, Mashuni is even baked within Roshi bread which in turn, would feel as if you're enjoying some pie from back home.

Fish

To comment on Maldivian food with little or no reference to how important a role fish plays in the daily diets of many would, in fact, be a misdemeanour of the highest order. Thus, as an example, a style of pepper grilled fish called 'Theluli Mas' requires a careful understanding of what goes into the making of same. Firstly, fresh tuna is sliced into thick pieces after which, it is lathered in a curry and tomato mix before the fish is pickled for around 30 minutes. Thereafter, the fish is fried until a golden brown and served with vegetables, rice or roshi. Next up is the spicy yet succulent Fihunu Mas which involves the making of deep cuts along with the tuna which is followed by an application of salt and other spices. Once grilled over hot coals, Fihunu Mas will surely act as a temptation too overpowering for one's tastebuds to ignore.

Beverages

Tea is a given in these parts as it provides for the most sought after beverage in the Maldives and can be easily experienced when one is on holiday at some of the Maldives villas that can be found here. Though, tea in the Maldives is often consumed with plenty of milk and sugar; a fact that must be made note of. Coffee is not the cheapest drink to have here but on another note, various tropical juices can act as substitutions if such is the need. Opt for some sweet palm juice or a more common type of juice after having explored the ins and outs of an isle and if residing at Kuramathi Maldives then a delightful selection of fresh juices would be at your beck and call.

Don't forget your sweet tooth

The desserts in these isles arrive in varying forms with fried banana pie also called 'Dhonkeyo Kajuru' serving as quite the treat indeed. A good dose of coconut pulp, sugar, flour and vanilla essence is mixed with the ripest bananas available to make a deep-fried and crunchy delicacy which certainly holds its own amongst some of the finest desserts in the region. Also, 'Bambukeyo Bondibai which comprises breadfruit as its chief ingredient, sugar and coconut milk represents a thick stew-like mixture which will definitely make your mouth water upon appearance.
