Recipe for Vanilla muffins and Chocolate muffins

Muffins were invented by the English. The first printed recipe dates from the early 18th century. They weren't as sophisticated as today's, but they were terribly successful. Later, in the early decades of the 19th century, they were so popular and appreciated that bakers in London would announce a new batch of fresh muffins by ringing jingling bells placed at the entrance to their shops. And as everyone strove to have hot muffins precisely at five o'clock for the traditional afternoon tea, the bells made an indescribable din. The British Parliament passed a law in 1840 to ban the ringing of bells. The law was disobeyed, but the custom died out by itself. The muffins are left over.

Recipe for Vanilla muffins

Ingredients

  • 3 eggs size M That is 150 g
  • 200 g of sugar
  • 70 ml of milk
  • 200 ml oil (175 g)
  • 250 g flour
  • 7 g of baking powder
  • The flavor of your choice
  • A pinch of salt

Method of preparation

  1. First, break the 3 eggs in a large bowl. Add all the sugar on top of them at once. Mix for 2-3 minutes until the mixture has increased its volume several times. Now add the flavors of your choice. I put lemon and vanilla. Add milk and oil. I mix for a few more seconds.
  2. Add baking powder and salt to the flour. We mix a little. We want the baking powder to be distributed evenly.
  3. Now we put the flour over the eggs, all at once. Mix again, but without exaggerating, just until everything is homogeneous, that is, about 30 seconds. The dough is ready.
  4. Now comes the first secret. Instead of baking immediately, we will cover with a plastic film and put the bowl with dough in the cold. It must stay for at least 1 hour, but it can also be kept overnight, i.e. a maximum of 12 hours. There are two reasons why we take this step. One is that flour absorbs liquids very well. This will give us soft muffins. The second reason is that the dough must be cold, you will immediately understand why.
  5. The secret of beautiful and tall muffins, like some mountain ones, consists entirely in the way of baking, so I'm sorry to tell you that you need a good oven, otherwise you will get burnt muffins. Preheat the oven to 250 degrees. If you have an electric oven, turn the heat up and down, without a fan.
  6. Portion the dough in the form of muffins lined with special papers, so that they are about three-quarters full. Then keep the form in the refrigerator while the oven heats up.
  7. When the oven has reached 250 degrees, put the muffins inside, then lower the temperature to 210 degrees. Baking takes between 13 and 15 minutes. Do not open the oven door because the temperature will drop suddenly and you will not get the same effect.
  8. Therefore, the beautiful rise of the muffins is achieved by the large temperature difference between the cold dough and the very hot oven. You can also bake at a lower temperature if your oven is not that good, but you will get normally raised muffins.

Recipe for Chocolate muffins

Ingredients

  • 3 eggs
  • 180 g of sugar
  • 150 g yogurt
  • 150 g of butter
  • 250 g flour
  • 60 g of cocoa
  • 80 g of chocolate chips
  • 1 sachet of baking powder
  • a pinch of salt

Method of preparation

  1. In a container, put the eggs with the sugar, a pinch of salt and beat the foam with the mixer, then add the melted butter, yogurt and cocoa.
  2. Mix well until all ingredients are homogenized.
  3. Add the sifted flour little by little together with the baking powder, then add the chocolate drops, mixing gently, until all the chocolate is well incorporated.
  4. In the muffin tray, put the special papers for this sweet, then fill them with the help of a spoon about 3/4 of this composition.
  5. Then we put them in the already preheated oven for 20-25 minutes at a temperature of 180 degrees Celsius.
  6. Let them cool down and if you prefer, you can sprinkle powdered sugar on top, they can be decorated with whipped cream or any kind of creams and fruits, according to your tastes and preferences.
