Hey hey my lovelies as promised here is the recipe for the fluffy pancakes I made in my video . I will keep it simple and sweet for you all to follow . This is a very simple recipe that I make all the time . Now you guys can make them too

The sweet and sour berry sauce just completes it

Ingredients

  • 2 Cups of self raising flour
  • 3 and a 1/2 spoons of sugar
  • 2 Cups of semi skimmed milk
  • 4 tbsp of butter
  • 2 Room temperature eggs
  • A pinch of lemon zest
  • 1/2 tsp of cinnamon powder ( I like to add 1 and a 1/2 only because I love cinnamon)
  • 1 tsp of baking powder (optional)

Method

Step 1 - Start of by mixing all dry ingredients put the flour in a bowl mix with the sugar, lemon zest , cinnamon powder and the baking powder (optional)

Step 2 - Now grab the milk and pour into a small bowl . Then add the butter in to the same bowl . Cover it (seriously ) and put in microwave for 30 seconds and check temp with finger if it’s still a little cold put it back in the microwave again for another 30 seconds . Once it’s warm (not piping hot ) mix the liquid to make sure all butter has melted through. We need to make sure it’s smooth and liquid.

Step 3 - Okie dokie time for the next step .Grab the bowl where there is all the dry ingredients and start pouring the liquids slowly into the mixture and use other hand to mix at the same time . I recommend to use a whisk but if you don’t have one just use a fork that’s what I normally use but make sure it is smooth we don’t want flour bubbles in the pancakes

Step 4 - Grab a frying pan (I advice non stick) and add some butter to it .

Step 5 -Turn on your oven on low heat so we can put the pancakes in and keep them warm whilst we make the berry sauce and make the rest of the mixture

Step 6 - Now turn on hob on low heat to make pancakes . Usually your first pancakes will look like a distant cousin of the other ones . Reason being is that it will soak up most of the butter leaving a buttery aroma for the rest and a clean survive to cook on .

Step 7 - Usually it would take around 2 minutes before you start seeing bubbles . Once you start swing little homes flip the pancakes . Then repeat same process with others

Berry sauce method and ingredients

200g of strawberry (fresh)

100g frozen berry mix

4tbsp of sugar (you can add more depends on how sweet you like it )

Whole Lemon

Step 1 - Grab a sauce pan and place all berries in the pan (make sure to chop them up )

Step 3 - Squeeze the lemon juice on top of berries

Step 4 - Add sugar and mix everything together

Step 5 - Turn on hob and put it on low heat . Cover the pan and let it sweat out the juices from the berries . This process usually takes 5 minutes

Step 6 - Uncover pan and use fork to squish down the berries that should be soft by now . If they are not soft cover it again and let it simmer for 5 more minutes .

Step 7- when you see the sauce bubbling turn it on medium heat and start mixing with spoon .The sauce will start becoming thick . When that happens turn of heat and pour over pancakes . The fun thing about this sauce is that you can store it in your fridge and use it as jam
