Kikunae Ikeda first ate the seaweed and tofu in the bowl and found the tofu stewed with the seaweed to be unusually tasty and refreshing, and then he drank the soup in the bowl and found that the soup stewed with the seaweed was even more flavorful than the seaweed and tofu themselves. He thought that the kelp had greatly enhanced the freshness, so the next day Ikeda Jumiao brought some kelp to the laboratory to do experiments and found that the kelp contained sodium glutamate, which is extremely pure and can stimulate freshness, and the white crystals extracted from it were MSG. The original MSG was extracted from kelp, but later, due to the high cost of extracting MSG from kelp, it was discovered that MSG could also be extracted from wheat and grain.

  The word fresh has evolved to the point where it no longer just expresses a sense of taste, but also has many other meanings that are connected to the taste of fresh. The meaning of fresh also includes tender, just like the new buds in early spring, you want to touch it, but only dare to touch it gently with your fingertips, afraid to break its tender life. Fresh also has the meaning of juicy fat, like just ripe peach, a bite of juicy fat flesh thick, do not care whether it is sour or sweet, but that fatty juicy taste is enough to let you have a deep feeling of fresh. Fresh also expresses a soft luster of color, like green, red makeup like fresh and bright, not beautiful purple, thousands of red dazzling beauty, nor black clouds, white and flawless high cold and lonely. Fresh also contains a vitality of life, just like the early morning waning sun, there is temperature but not hot, light but not blinding, sharp but not poisonous, everything is just beginning to feel.
