1 teaspoon thyme

1 teaspoon curry powder

1 teaspoon paprika

1 teaspoon dried or fresh basil leaves

1 bay leaf

2 tablespoons tomato paste

2 tablespoons vegetable oil

2 cups chicken or vegetable broth

1 cup mixed vegetables (carrots, peas, green beans)

Salt and pepper to taste

Instructions:

Rinse the rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.

Heat the vegetable oil in a large pot or skillet over medium heat. Add the chopped onions and sauté until they become translucent.

Add the minced garlic and sauté for an additional minute until fragrant. Be careful not to burn the garlic.

Add the blended tomatoes, bell peppers, and Scotch bonnet peppers (if using) to the pot. Stir well and cook for about 10 minutes to allow the flavors to meld and the sauce to reduce.

Stir in the tomato paste, thyme, curry powder, paprika, basil leaves, bay leaf, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
