Peppermint Mocha Cookies Recipe

Chocolate Meets Peppermint Rich, chocolatey cookies with a hint of refreshing peppermint flavor.

Ingredients

1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 tsp vanilla extract

1 tsp peppermint extract

2 ¼ cups all-purpose flour

¾ cup unsweetened cocoa powder

1 tsp baking soda

½ tsp salt

1 ½ tbsp instant espresso powder (or instant coffee)

1 cup semi-sweet chocolate chips

½ cup crushed peppermint candies or candy canes

Instructions

Preheat the Oven

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

Cream Butter and Sugars

In a large bowl, beat the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy (about 2-3 minutes).

Add Eggs and Extracts

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and peppermint extract until combined.

Combine Dry Ingredients

In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and instant espresso powder.

Add Dry Ingredients to Wet Ingredients

Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

Fold in Chocolate Chips and Peppermint Candy

Using a spatula, fold in the chocolate chips and crushed peppermint candies. The dough will be thick and rich.

Scoop and Shape Cookies

Drop dough by rounded tablespoons (or use a cookie scoop) onto the prepared baking sheets, spacing each about 2 inches apart.

Bake the Cookies

Bake in the preheated oven for 8-10 minutes. The cookies should look set around the edges but still soft in the center.

Cool and Enjoy

Allow cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Optional Topping Ideas

For extra holiday flair, dip half of each cookie in melted chocolate and sprinkle with additional crushed peppermint candies.

Drizzle white or dark chocolate over the cookies for a festive design.
