
Cheesy Pepper Rice
Ingredients
For the rice
1 cup basmati rice, soaked for 30 minutes and drained
3 tablespoons oil
Salt, to taste
Other ingredients
2 tablespoons oil
1/2 cup sliced onion
3/4 cup sliced green chillies (green, red and yellow)
2 tablespoons chopped dried red Kashmiri chillies
1 tablespoon chopped garlic
Salt, to taste
For garnish
1/4 cup grated cheese
Procedure
For the rice
Heat the oil in a deep non-stick pan, add the rice and sauté it on a medium flame for 3 minutes.
Then add 3 cups of water, mix gently, cover the pan and cook on a medium flame for 10 to 12 minutes, stirring occasionally. Set aside.
Next method
Heat a wide non-stick pan, add red Kashmiri chillies and sauté on medium heat for 1 minute.
Mix the sautéed red chillies, garlic and 2 tablespoons of water in a mixer to make a crispy paste and keep it aside.
Heat oil in a wide non-stick pan, add onion and green chillies and sauté on medium heat for 2 minutes.
Then add chilli-garlic crispy paste and sauté on medium heat for 1 minute.
Finally add rice and salt, mix well and cook on medium heat for another 1 minute, stirring occasionally.
Garnish with cheese and serve hot.
