Mustard seeds are the most used spice in India. These are round and aromatic seeds. They are 1-2 mm in diameter and black, brown and yellow. From ancient times this spice has been ruling the kitchen floor. There are being fried until they make a pop sound. Not only these spices are used to add flavour but also the oil which has been extracted from this mustard is used to provide cosy in the chilling winters. contain a great source of oil and protein.

**WHERE DID THE MUSTARD SEEDS PROCESS AND MANUFACTURE INTO EDIBLE FORM :**

Most mustard seeds can get from organic farm and plant nurseries. In India the organic farms are present in the Delhi NCR, Faridabad. The soil in which these are cultivated are surely pure because of the vermicomposting process. This is an organic process in which the soil is treated with organic fertilizers and soul friendly worms like EISENIA FETIDA.

There are various types of mustard seeds but mainly of two types.

* Yellow mustard seeds.

* Black mustard seeds.

Yellow mustard seeds are incredibly soft to heat.

Brown seeds are not that much soft to heat.

Wet mustard is made up of the blending process of yellow and black or brown seeds. While making the seeds wet, the dry mustard seeds are mixed up with water. Then an enzyme response is initiated making the seed hot. In this process, the mustard seeds are hot until they are preserved. The warmth lasts for only 24 hrs. But in the case of black or brown mustard seeds, the heat is usually kept up for a long time.

We all have heard about rice flour and wheat flour but there is also mustard flour in which the bran is removed from the seed. It is almost similar to other flours with 70% of brassica in it. Mustard flour is mainly used in making mayonnaise. The mustard seeds are no of use when the seeds are broken and liquid is added. Therefore the mustard seeds oil can produce heat. Mustard is heavy and from this sauces are made. In mayonnaise, mustard oil is added to make it thicker and better.

In other countries, yellow mustard is mostly being used. American mustard is made with yellow mustard seed than brown mustard seeds. As yellow mustard seeds are hotter than brown mustard seeds. It is also considered more flavourful and tastier than brown . Not only it add flavour but also it adds colour to the food.
