4-5 pound beef brisket, trimmed of excess fat

2-3 cloves of garlic, minced

2 tablespoons olive oil

2 teaspoons salt

1 onion, sliced

2-3 carrots, sliced

2-3 stalks of celery, sliced

2-3 bay leaves

1 tablespoon tomato paste (optional)

Instructions:
