Generally, these tools are divided into two categories: primary processing and secondary processing. An ISO certification is a globally recognized system that determines acceptance of food products throughout the world. This certification, however, has several limitations. For example, it does not specifically define the quality control processes that must be used in each country. Additionally, only those countries that are signatories to ISO standards are considered to be qualified to apply for certification. It should be noted that even countries that are not signatories to ISO standards still can apply for ISO certification, provided they meet basic criteria.
