Spicy Shrimp and Avocado Salad Recipe

This recipe is an easy and nutritious salad. To make it more delicious, add some avocados to it. If you do so, your salad will be very fresh and tasty.

It takes only 14 minutes to prepare! And enjoy only 20 minutes to cook it!


· 300g shrimp (about 14 oz)

· 1 package lettuce (any type of your choice)

· 2 tbsp lemon or lime juice (freshly squeezed)

· 5 cloves garlic, minced

· 1 medium onion, finely chopped

· ½ tsp chili powder

· Salt and pepper to taste

· 1 tbsp coconut oil or cumin oil (or olive oil)


Cook the shrimp in boiling water with garlic. Make sure it is cooked well before you remove them from the pan. Drain the shrimp and set it aside. Heat the oil in a pan, then add onions and saute until they are softened. Now add chili powder, onion powder, salt, pepper, lemon, or lime juice to it. Add cleaned shrimp into this mixture and stir well. Cook for 2 more minutes before serving with lettuce leaves on top of each other. Wash the lettuce leaves and dry them.

Arrange the shrimp salad on top of the lettuce leaf (or your choice of salad ingredients) and serve.

Pork Chops with Creamy Sauce Recipe


· 6 bone-in pork chops (each about ½ inch thick)

· Salt and pepper to taste

· 2 tbsp coconut oil or olive oil for pan fry (or butter)


Clean the pork chops with water and dry them using paper towels. Season with salt and pepper on both sides. Heat the oil in a pan, then add pork chops to it. Cook each side for 4 minutes until they are browned well. Now cover the pan with tight-fitting lid and cook for 10 minutes more or until the internal temperature reaches 150 F (65 C). Remove the lid and cook for 3 more minutes. Serve with your choice of side dishes such as tomato salad, green beans, or rice.

Lemon Garlic Steamed Broccoli Recipe


· 2 ½ cups water

· ½ tsp salt (or to taste)

· 1 head broccoli (cut into florets, stem removed)

· 3 cloves garlic, minced

· ½ tbsp minced fresh rosemary leaves (optional)

· ½ cup mascarpone cheese or half and half cream


Clean the broccoli florets with water and dry them using a paper towel. Heat 1 cup of water in a pot, then add salt to it. Put the broccoli florets into the boiling water with garlic and cook for 4 minutes. Drain it before serving.

Now heat ½ tbsp olive oil or coconut oil in a pan over medium-high heat. Add garlic and broccoli to it. Stir well and cook for 2 more minutes. Add mascarpone cheese or cream to the pan, stir again, and cook for 1 minute before serving.

Greek Style Grilled Chicken Breast Recipe


· 4 boneless chicken breast halves (with skin)

· 1 cup plain Greek fat-free yogurt

· 1 tbsp minced garlic (or to taste)

· ¼ cup sliced cucumber (chopped)

· Salt and pepper to taste


Clean the chicken breast with water and dry it using paper towels. Season both sides of the chicken breasts with salt and pepper. Place the chicken breast skin side up on a broiling pan and set aside.

In a small bowl, mix yogurt with minced garlic, salt and pepper to taste, cucumber, 1 tbsp of oil, and lemon juice. Spoon this sauce over the chicken breasts. Broil the chicken for about 15 minutes or until cooked through, basting several times with the sauce. Serve it hot with your choice of side dishes.

Coconut Flour Pancakes Recipe


· ½ cup coconut flour (or almond flour/meal)

· 4 large eggs, beaten well

· 1 tsp ground cinnamon or vanilla extract (optional)


Combine the eggs with dry ingredients in a bowl. Stir until eggs are mixed thoroughly. Heat a skillet or griddle over medium heat and add 1/4 tsp coconut oil (or butter, if desired).

Once the pan is hot, pour roughly 1/4 cup of batter onto the hot surface for each pancake. Cook until the pancakes have risen, several minutes. Flip them over to cook on the other side. Cook for several additional minutes, until browned on both sides and cooked through. Serve it with your choice of sides such as butter, sour cream or honey.

Eggplant Parmesan with Basil Apricot Sauce Recipe

Ingredients: (Serves 4)

· 2 large eggplants (cut into ½ inch thick slices)

· Extra virgin olive oil (for drizzling)

· ¼ cup almond flour (or coconut flour/meal)

· 1 tbsp Italian seasoning (optional)

· Salt and pepper to taste


Brush both sides of the eggplant slices with olive oil and season them using Italian seasoning, salt, and pepper. Place the eggplants in a single layer on greased cookie sheet. Bake at 400 F (200 C) for about 15 minutes or until tender. Remove from oven and set aside.

Meanwhile, pour coconut milk into a saucepan over medium-high heat. Whisk in almond flour and add salt and pepper to taste. Stir continuously until the sauce thickens, about 5 minutes

· 2 cups fresh basil leaves (rinsed and patted dry)

· ½ cup apricot preserves

Process together the basil, apricot preserves, and 1/2 cup coconut milk in a food processor until smooth.

While processing, gradually add coconut oil. Process until half of the coconut oil has been added and the ingredients are well blended. Add more coconut milk or oil as needed to reach your desired consistency. Serve sauce immediately with eggplant slices.
